Homemade seasoning mixes are the home cook’s secret trick for effortless dinners. Toss a mix on top of veggies, chicken, shrimp, ground meats, and you’ll come out with a flavorful dish.

When we’re talking about recipes you can make from scratch at home, a spice blend is at the top of my list for the most versatile and easiest to make.

If you’re the kind of home cook who wants to make something bold and flavorful, but easy, and you’re not sure what spices or how much of them to use, then spices mixes are for you.

Homemade spices mixes have a fresher flavor than store-bought ones usually, and you can make almost anything you can think of, customize, double or triple and make it suitable for your diet.

I make my spice mixes salt-free because I want to be in control of how much salt goes into the dish – regardless of how much seasoning I want.

Spices in piles on a plate labeled chili powder, cumin, smoked paprika, garlic powder, onion powder, ground oregano, and gochugaru.
  • chili powder: this spice is earthy, smoky and mildly spicy although some versions are spicier.
  • cumin: an earthy, warm spice.
  • smoked paprika: brings sweet and smoky flavors.
  • garlic powder and onion powder: the most common spices that people usually have in their pantries. These spices are savory and taste strongly of garlic and onion.
  • ground oregano: oregano and earthy and warm with slight hint of citrus. I like the ground version because of the strong flavor. Use dried oregano leaves instead and use 1 1/2 to 2 teaspoons instead of 1 teaspoon.
  • red pepper: ground red pepper will bring some heat to the seasoning mix. Cayenne powder is commonly used but I use Gochugaru, Korean red chili flakes. They have a slight fruity, sweet, and smoky flavor with a bit of heat and I enjoy the flavor. If using cayenne powder instead, I recommend starting with 1/4 to 1/2 teaspoon depending on your heat tolerance. Add more if you need it.
