Ingredients
See the recipe card for exact amounts.
- potatoes: I use russet potatoes because I always have them in the house and they have great flavor and texture.
- seasoning: I use my own homemade dairy-free ranch seasoning mix. Use your favorite or check out my recipe to make it from just 5 dried herbs and spices: chives, parsley, dill, garlic powder, and onion powder, plus nutritional yeast for a flavor boost.
- oil: I use olive oil for flavor, for something for the seasoning mix to stick to, and to help crisp the exterior of the potato cubes.
Substitutions
- Yukon Gold potatoes are good too. I use baby potatoes in my air fryer smashed potatoes recipe.
Instructions
Prep Tips
Peel the potatoes if peeling and cut them into cubes.
- Add the cubed potatoes to a large mixing bowl, drizzle over the oil, and toss the potatoes.
- Add the seasoning and toss to coat.
My air fryer has two trays so I can cook quite a bit at a time. If you use a basket-style air fryer, you may need to make potatoes in batches.
- Lay the potatoes in a single layer on the air fryer tray or basket.
- Air fry the potatoes for 20 minutes, shaking every 5 minutes. If you use the tray style like mine, you'll also want to rotate the trays for even cooking.
The potatoes are done when you can poke a fork through the center easily and they are golden brown on the outside.
Tips for making air fryer potatoes
- Coating the potatoes in oil before adding the seasoning helps the seasoning stick and helps the potatoes get crispy in the air fryer. If you're minimizing oil, try using cooking spray oil, but the results may not be quite the same.
- Cut the potatoes into evenly sized cubes for the most even cooking.
What to serve with ranch potatoes
I like this simple side dish with a dollop of yogurt or sour cream next to a burger or as part of a bowl. Try a crispy chicken burger, a loaded cowboy burger, or black bean burger or add ranch potatoes and these herby air fryer salmon bites to a bowl with spicy peanut sauce.
