This cucumber mint vodka cocktail is light, refreshing, and easy to make with fresh cucumber, mint, lemonade, and sparkling water. It’s the kind of drink that’s perfect for a hot summer afternoon, backyard BBQ, or sitting on the patio after dinner.

This refreshing summer cocktail is similar to my Cucumber Collins recipe, but with the addition of muddled mint, lemon slices, and more lemon sparkling water. Try both and see if you prefer it with mint, similar to a Mojito, or without!

  • Vodka: Use your favorite brand. I like Tito’s Vodka.
  • Lemonade: Adds sweetness and bright lemon flavor. Homemade lemonade works well, but store-bought is perfectly fine.
  • Lemon sparkling water: Gives the cocktail bubbles without adding extra sugar.
  • Cucumber slices: Fresh cucumber adds a clean, cooling flavor.
  • Lemon slices: Add fresh citrus aroma, and as a bonus, they make the drink look summery and refreshing.
  • Mint leaves: Mint adds freshness. Lightly muddle or clap the leaves between your hands before adding them to release the natural oils.

Tips for Making a Cucumber Mint Cocktail

  • Don’t crush the mint too aggressively. A gentle press or clap behind your hands, or a quick muddle in the glass is enough.
  • Add the sparkling water last so it stays fizzy.

How to make a lemon, cucumber and mint vodka cocktail

  1. Add the mint leaves and a splash of lemonade to your cocktail glass. Muddle gently.
  2. Add a few lemon and cucumber slices around the outside of the glass. Add ice to keep the slices in place, and then add another layer.
  3. Add the vodka, lemonade, and lemon sparkling water.
  4. Stir gently with a long cocktail stirrer and garnish with more lemon and cucumber slices, or a cocktail pick with lemon and cucumber. Serve.

Storage

This cocktail is best enjoyed immediately after mixing because the sparkling water will gradually lose its bubbles.

FAQs

Can I make this cocktail without alcohol?

Yes. Simply leave out the vodka and replace it with additional sparkling water or lemonade for an easy mocktail.

Lemon Cucumber Mint Vodka Cocktail Recipe

This cucumber mint vodka cocktail is light, crisp, and refreshing with fresh cucumber, mint, lemonade, and sparkling lemon water. It’s easy to make in just a few minutes and is perfect for warm weather entertaining.

Ingredients
  

  • oz vodka
  • ½ cup lemonade
  • ½ cup lemon sparkling water
  • ice
  • cucumber slices
  • lemon slices
  • 6 to 8 fresh mint leaves

Instructions

  • Add mint leaves and a splash of lemonade to a cocktail glass and muddle gently.
  • Add a layer of lemon and cucumber slices around the bottom of the glass.
  • Fill the glass with ice and add another layer of lemon and cucumber slices.
  • Add the vodka and lemonade.
  • Pour in the sparkling water.
  • Stir gently and serve immediately. Optionally, garnish the rim with cucumber and lemon slices, or try a cocktail pick with lemon and cucumber, or a few more fresh mint leaves.

Notes

You can also clap the mint leaves between your hands before adding them instead of muddling them. Just be gentle with them either way so they don’t get bitter and grassy.
Add the sparkling water last to keep the drink fizzy.
