- Chicken breast: The star of the show, chicken breast is lean, protein-rich, and takes on flavors well. Slice it into thin strips to make sure to get lots of seasoning mix for the best flavor.
- Fajita Seasoning: Adds a robust, spicy flavor to the chicken.
- Vegetable Oil: Helps in cooking the chicken evenly on the griddle.
- Beer: for flavor and helps keep the chicken tender. I use Alexander Keith's. Use another beer you like or a splash of water instead when you get to the steaming step.
- Corn Tortillas: Traditional and perfect for tacos. I used white corn tortillas here.
- Cilantro: Fresh and citrusy, adds a burst of flavor.
- Salsa: I top these tacos with my mango and black bean salsa for a sweet contrast in flavor to the spiced chicken.
Substitutions
- Chicken thighs can be used instead of chicken breast for a juicier, more flavorful option.
- Flour Tortillas: Can be used if you prefer a softer texture.
- Fajita Seasoning: use Taco seasoning instead if you prefer.
When cooking on a Blackstone griddle I like to use a long grilling spatula and a cooking dome for steaming - this works great for melting cheese on burgers like my Blackstone Smashburger recipe.

Prep Tips
Once the salad is made, you'll just grill the chicken and warm the tortillas and you'll be ready to serve!
- Slice the chicken breast and add the fajita seasoning, salt and pepper, lime juice, and some oil to help it all stick.
- Add the chicken to the grill and cook for 3-4 minutes per side until cooked.
- Move the chicken into a pile on the grill.
- Pour on a few splashes of beer, moving quickly so it doesn't evaporate immediately. Add a cooking dome and let the chicken steam for 2-3 minutes.
TIP: Chicken is done when it reaches an internal temperature of165°F (74°C) using a meat thermometer.
- While the chicken steams, warm the tortillas for 5-10 seconds per side. Stack the tortilla and place in a tortilla warmer or in a towel to keep them soft and warm.
- To serve, place some chicken in a tortilla.
- Add the mango and black bean salsa or whatever other toppings you'd like to add.
- Drizzle with yogurt or sour cream and add fresh cilantro. Serve.

Ingredients
For the Chicken
- 2 chicken breasts (thinly sliced)
- 4 teaspoons fajita seasoning (or taco seasoning)
- 1 tablespoon olive oil
- 2 teaspoons lime juice
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- a few splashes of beer or water (optional)
For the Tacos
- 6 corn tortillas
- crema (sour cream, or Greek yogurt)
- cilantro
For the Mango Black Bean Salad
- 1 ataulfo mango (diced)
- 15.5 oz black beans (1 can, drained and rinsed)
- 1 Roma tomato (diced)
- 1 avocado (diced)
- 1 cup corn
- ½ cup cilantro
- 1 tablespoon lime juice
- 2 tablespoons olive oil
- ½ teaspoon ground cumin
- 1 teaspoon honey
- salt and pepper
Fajita Seasoning
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 2 teaspoons smoked paprika
- 1 teaspoon ground oregano (or 1 ½ teaspoons dried oregano)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¼ teaspoon cayenne pepper
Instructions
For the Mango Black Bean Salsa
- Mix all of the ingredients together in a mixing bowl and set aside until needed.
For the Chicken
- Preheat the grill to medium-high heat.
- Mix the fajita seasoning. Add the seasoning, salt and pepper, lime juice, and oil to the chicken and mix well.
- Add the chicken to the grill and cook for 3-4 minutes per side. Add a few splashes of beer or water and cover with a cooking dome. Let steam for 2-3 minutes while you heat the tortillas on the grill for 5-10 seconds per side.
For the Tacos
- Add the chicken, mango and black bean salad, crema, and cilantro to a tortilla. Repeat with all tortillas and serve.
