Spicy pickle pizza is made with my homemade pizza dough, an easy garlic and dill white sauce, mozzarella, feta, and sliced spicy pickles. It’s creamy, tangy, and slightly spicy and made without tomato-based pizza sauce.

- Pizza Dough: I use my trusted pizza dough recipe every time I make pizza, and it’s a very simple, typical mix of all-purpose flour, instant yeast, sugar, salt, olive oil, and water!
- The Sauce: Instead of tomato sauce, you’ll make a simple pan sauce with garlic, dill, butter, flour, and milk. Red pepper flakes add a bit of heat, but you can skip it if you don’t tolerate heat well.
- Cheese: I like a mix of mozzarella for melt and feta for tang.
- Toppings: I like spicy pickles, but you can use regular dill pickles if you don’t tolerate heat well. I also like a drizzle of hot honey because I love spice. I make the hot honey from my hot honey chicken recipe.
Substitutions
- Mild version: Use regular dill pickles instead of spicy pickles. I like it spicy!
- Extra heat: Add sliced jalapeños or more red pepper flakes
- Cheese swap: Try Monterey Jack or white cheddar
- Shortcut: Use store-bought pizza dough
Tips for the Best Pickle Pizza
- Pat the pickles dry: This helps prevent the pizza from getting soggy.
- Don’t overload the sauce: A thin layer works best so the crust stays crisp. Brush the outside with olive oil for extra browning!

Prep Tips
Make the dough
Add flour, yeast, salt, and sugar to a large bowl. Add warm water and olive oil, and mix until a dough forms. Knead until smooth, about 5-8 minutes. Cover and let rise until doubled.
Make the white sauce
Melt butter in a small saucepan over medium heat. Add flour and whisk for about 1 minute to cook out the raw flour taste.
Add garlic and cook for 30 seconds.

Slowly whisk in the milk. Simmer until thickened, then stir in red pepper flakes, dill, salt, and pepper. Set aside.

Assemble
Stretch or roll the dough into your preferred shape and place it on a baking sheet or a cornmeal-dusted pizza peel, if baking on a pizza stone as I do.

Spread the white sauce evenly over the dough. Brush the outside inch with olive oil.

Top with mozzarella, feta, and sliced pickles.


Bake
Bake for 18-20 minutes or until the crust is golden and the cheese is melted and bubbling.

Storage
Store leftovers in an airtight container in the fridge for up to 3 days.

- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Toppings
- 3 spicy pickles sliced
- 1 ½ cups shredded mozzarella
- ¼ cup crumbled feta
Instructions
Make the dough and let it rise
- Mix the flour, yeast, sugar, and salt together. It’s ok if the salt and yeast go together here, we’re mixing it all right away. Add the oil and water.
- Mix on medium-low, using a dough hook, for about 5-8 minutes or until it pulls away from the side of the bowl and is smooth and soft.
Make the white sauce
- Melt butter in a small saucepan over medium heat. Add flour and whisk for about 1 minute to cook out the raw flour taste. Add garlic and cook for 30 seconds. Slowly whisk in the milk. Simmer until thickened, then stir in red pepper flakes, dill, salt, and pepper. Set aside.

- Preheat oven to 450°F (230°C).
