Easy No Bake Peanut Butter Chocolate Rice Krispie Treats

Make these easy chocolate peanut butter rice Krispie treats for a sweet snack or special dessert. These easy no bake treats are full of creamy peanut butter, crispy rice cereal, sweet marshmallows, and rich dark chocolate.

These are the simplest treats to make. Just melt peanut butter and marshmallows together and add crispy rice cereal for a quick no bake dessert recipe.

This recipe is great for get-togethers and if you use easter themed Rice Krispies like I did, it makes a really cute and easy easter dessert.

The combination of peanut butter and chocolate paired with sweet marshmallows and the crispy crunch of Rice Krispies makes for a simple, satisfying, crowd-pleasing dessert.

  • crispy rice cereal: for a crispy crunch treat. I used easter Rice Krispies.
  • peanut butter + butter: For flavor and texture.
  • marshmallows: You’ll need a bag of mini marshmallows. This adds sweetness and binds the ingredients together.
  • vanilla extract: for added flavor.
  • chocolate: this is for topping the bar. I use dark chocolate chips but you can use milk chocolate if you prefer.

Substitutions

  • peanut butter: I use creamy peanut butter, but you can try chunky peanut butter instead. Natural peanut butter isn’t sweet like creamy peanut butter but you can try for a less sweet, more peanut forward flavor.
  • chocolate: you can use whatever chocolate you prefer, I like dark chocolate for a less sweet treat. You can also garnish the top by dropping ingredients into the melted chocolate layer. Try chopped peanuts or chopped peanut butter cups. Try white chocolate chips or butterscotch chips for an extra sweet treat.

Use parchment paper to line your baking pan which helps you remove the whole bar from the pan for slicing.

Instructions

Prep Tips

  • Prepare a 9 x 13 baking pan by lightly greasing with butter, or cooking spray, or lining it with parchment paper.

  1. Melt the butter and peanut butter together until liquid. I do this on the stove top in a large pot that is big enough for mixing. Heat over medium heat until smooth and liquid.

  1. Remove from the heat and add the vanilla extract and stir. Next, add the marshmallows and mix until they melt in.

You can also melt the butter and peanut butter in a large microwave-safe bowl.

  1. They’ll take only a minute or so to melt.

  1. The mixture should be smooth.

  1. Add the Rice Krispie cereal to the marshmallow mixture and stir to mix.

It’ll be easy at first and then require a bit more effort. Make sure it’s all mixed well.

  1. Next, add the cereal mixture to the prepared pan and spread it into an even layer.

  1. I use a spoon for this, and you can spray it with cooking spray so it doesn’t stick if you need to.

Melt the chocolate in a microwave-safe bowl in 2 30-second increments stirring in between. Then microwave 15 seconds at a time, stirring, checking, and repeating until the chocolate is mostly melted. Stir to melt the remaining chocolate.

  1. Pour the chocolate on top of the Rice Krispies bar and spread it into an even layer.

  1. Let set in the fridge for 20-30 minutes.

Let the bar sit at room temperature for a few minutes before slicing.

I like to remove the whole bar using the parchment paper and place it on a cutting board to slice. This saves the bottom of your baking dish if it isn’t glass.

Tips for making peanut butter Rice Krispie squares

  • Stir the peanut butter and butter continuously while melting to ensure it doesn’t burn.
  • Spray the back of a spoon with cooking spray when pressing the mixture into the baking pan.
  • Let the Rice Krispie treats set in the fridge before slicing them into squares for clean edges.

FAQs

Can I make this without peanut butter?

Yes, try almond butter or cashew butter instead. I haven’t tested it but any nut butter should work.

Can I use a different cereal?

Yes, I’ve tried this with Cheerios and it works well but needs to stay at room temperature because when refrigerated it’s a bit too hard to eat.

  • Scoop the mixture into the prepared pan and flatten out. I use the back of a spoon to flatten it. You can spray the spoon with cooking spray to make sure it doesn't stick.
  • Melt the chocolate in a microwave-safe bowl in 2 30-second increments stirring in between. Then microwave for 15 seconds at a time, stirring, checking, and repeating until the chocolate is mostly melted. Stir to melt the remaining chocolate.
  • Pour the melted chocolate on top of the Rice Krispie mix in the pan. Spread it out in an even layer.
  • Refrigerate for 20-30 minutes or until the chocolate is set.
  • Slice in 24 and serve.
    I like to use the parchment paper to help remove the entire bar to a cutting board to slice. You can then put the squares back into the pan.
