Peanut Butter Blondies

Peanut butter fans will love these blondies with peanut butter where creamy peanut butter, peanut butter baking chips, and chopped peanuts all come together in one delicious treat.

I created this recipe during a move and let me tell you - stress eating blondies with peanut butter is not a bad thing.

I also make a lot of peanut butter desserts in my house.  Plus, a lot of recipes with chocolate and peanut butter - the best combination ever!

If you feel the same way, try these peanut butter chocolate chip cookie bars, chocolate peanut butter Rice Krispies, or chocolate peanut butter protein balls.

Ingredients

  • peanut butter: I use creamy butter blended with regular butter for the base of the recipe.
  • sugar: white sugar and brown sugar for flavor and texture. Brown sugar offers a deeper flavor and helps create a softer texture.
  • eggs: for texture and binding.
  • flour: for structure. Make sure to weigh it for the most accurate measurement. I go by 120 grams per cup for the all-purpose flour I use.
  • baking powder: for lift.
  • baking chips: I use peanut butter baking chips. If you love the combination of peanut butter and chocolate, try chocolate chips instead or a mix of both! Or reese's pieces for more flavor and crunch!
  • chopped peanuts: gives more peanutty flavor and a nice crunch.

Prep Tips

  • Preheat oven to 350℉ (180℃).
  • Line a 9x9 pan with parchment paper.
  1. Cream together the butter and sugars for a few minutes until smooth.
  2. Add the eggs and vanilla and mix to combine.
  3. Add the dry ingredients, mix to combine.
  4. Finally, add the peanut butter chips and chopped peanuts. 
  5. Bake for about 25-30 minutes, or until done. Use a toothpick to check if it's cooked through if you like.

I cut this square into 16 for serving.

Storage

Store leftover blondies covered at room temperature for 4-5 days.

Peanut Butter Blondies

Easy blondies with peanut butter featuring creamy peanut butter, peanut butter baking chips, and chopped peanuts.

Ingredients
 
 

  • 4 tablespoons unsalted butter (½ stick) room temperature
  • ¼ cup smooth peanut butter
  • ¼ cup granulated white sugar
  • ⅓ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ¼ cup all-purpose flour 150 grams
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup peanut butter chips
  • ¼ cup chopped peanuts

Instructions

  • Preheat the oven to 350℉ (180℃).
  • Line a 9x9 baking pan with parchment paper.
  • Cream together butter, peanut butter and both sugars, about 5 minutes, until light and fluffy.
  • Add eggs and vanilla extract and mix until combined.
  • In a separate bowl, mix together flour with baking powder and salt. Add to mixing bowl and combine.
  • Fold in peanut butter chips and peanuts.
  • Add the batter to the prepared 9x9 pan.
  • Bake for 25-30 minutes, or until done. Test with a toothpick.

Notes

Store the leftover blondies covered at room temperature for 4-5 days.
Try chocolate chips instead of peanut butter chips.

    This is the sort of thing I need this weekend. I am going to attempt a "square video" edit...and I just know I will need all the extra help I can get. These would be perfect to help me through the frustration I just know I am going to have.

    Oh dear - I'm totally there with you on the stress eating front. Good luck with this move! I can just imagine that theses yummy bars would help with the stress! Seriously though, the peanut butter chips in them sound perfect!
