Mediterranean Flatbread Pizza | Go Mediterranean with this flavor packed naan bread pizza. Grill the chicken and zucchini and then top naan bread with mozzarella and feta cheese, olives, sun-dried tomatoes, artichokes, pickled red onions, fresh herbs, olive oil and balsamic vinegar.

Any time I make pizza, I happen to believe it’ll be great as long as I use delicious, fresh toppings. For this Mediterranean Naan Bread Pizza, I used extra virgin olive oil, balsamic glaze, mozzarella and feta cheeses, sun-dried tomatoes, artichokes, green olives stuff with jalapeno, homemade pickled red onions, grilled chicken and zucchini (feel free to leave out the chicken for a fabulous vegetarian pizza!), and then I topped it with fresh herbs – oregano and basil – right from my garden.

Making Homemade Pizza

You can go the longer route and make my Quick Homemade Pizza Dough. If you do that, don’t forget to make my 5-minute pizza sauce – it’s so easy but has such a big payoff on flavor. This is a winning combo to me!

Shortcuts for Pizza

But recently I’ve been into trying some shortcut pizzas. Out at my cabin, homemade pizza can be a bit more difficult to take on. And I want to spend my time outdoors and doing other things right now. So shortcut pizza is my latest experiment.

A few weeks ago I was on a Mexican inspired food kick and decided to pair my two loves, and let me just tell you that :

How to Make Mediterranean Naan Bread Pizza

Start with grilling the chicken and zucchini on the bbq or a grill pan. Drizzle the chicken with olive and then season with the Za’atar. Do the same with the zucchini.

Grill the chicken for about 6 minutes or until cooked and at an internal temperature or 165°F. Grill zucchini for about 5 minutes.

Once those are both done, get your naan breads ready.

Drizzle with olive oil.

Top with mozzarella and feta cheese.

Add the grilled zucchini.

Add the olives, sun-dried tomatoes and artichokes.

Bake for 10 minutes at 375°F then top with pickled red onions.

Scatter fresh herbs over top.

Mediterranean Naan Bread Pizza

Go Mediterranean with this flavor-packed naan bread pizza. Grill the chicken and zucchini with Za'atar seasoning, and then top naan bread with mozzarella and feta cheese, olives, sun-dried tomatoes, pickled red onions, fresh herbs, olive oil and balsamic vinegar.

Ingredients
  

For the Pizzas:

  • 4 naan
  • 1 ball mozzarella cheese shredded
  • feta cheese
  • artichokes
  • sun-dried tomatoes
  • olives of your choice
  • olive oil
  • fresh herbs oregano, lemon thyme, basil, chives

For the Chicken:

  • 2 chicken breasts cut into strips
  • 2 teaspoons Za’atar seasoning
  • 1 teaspoon oil
  • salt and pepper to taste

For the Zucchini:

  • 1 large zucchini sliced 1/4 inch thick
  • 1 ½ teaspoons Za’atar seasoning
  • 1 teaspoon oil
  • salt and pepper to taste

Instructions

For Chicken:

  • Preheat grill to medium. Slice chicken into strips. Drizzle with a teaspoon of olive oil plus the Za’atar seasoning and salt and pepper. Grill for about 6 minutes, over medium or until cooked through and the temperature is 165°F internally.

For Zucchini:

  • Slice each zucchini and then drizzle with a teaspoon of olive plus the Za’atar seasoning and salt and pepper.
  • Grill for 5 about 5 minutes, over medium.

For Each Flatbread:

  • Drizzle with olive oil.
  • Top with a quarter of the mozzarella and some feta.
  • Add grilled zucchini.
  • Add grilled chicken.
  • Add the sun-dried tomatoes, olives and artichokes.
  • Bake for about 10 minutes at 375 and then broil for a minute or two. Add the pickled red onions.
  • Top with fresh herbs and drizzle of balsamic vinegar. Slice and serve.
