Homemade Chicken Strips with Panko Crumbs and Smoked Paprika
As I’ve said before, my daughter is a vegetarian. My son is, decidedly, not, haha. So to control the chaos of dinnertime, and ensure I don’t have to cook two or three different meals every night, I pre-cook different options for both of them. On nights when we’re having these easy-peasy chicken strips, I make sure I’ve got veggie patties in the freezer. And vice versa. Just add cooking time for frozen chicken strips.
Try these chicken strips with some pasta and a side salad, I think you’ll like how easy they are.
To bread the chicken strips
I’ve simplified the preparation by adding some spelt flour into the bread crumbs instead of dredging each strip. I set up a bowl with a whisked egg, and then a plate with the breadcrumbs, flour and spice mix.
For three of us, I cut two chicken breasts into strips (you can just as easily buy these precut, if you prefer).
Breading is easier if you keep one hand for touching chicken and one hand dry. I use my left hand for chicken, because when I cut the breasts into strips, I use my left to hold the chicken while my right hand holds the knife.
I add all of the chicken strips to the bowl at once (with my left hand). Still using my left hand, I take one strip out of the egg at a time and lay it on the plate of breadcrumb/flour/spice mixture then I use the dry hand to pick up some crumbs and drop them onto the chicken strips, and then press it in. Use the same hand to remove the chicken to a prepared baking sheet. (I bake them on a silicone sheet. )
Do this for all the pieces and then spray them with a bit of baking spray (store bought can or oil spritzer – either will do)
Then just bake them for 10-12 minutes per side, or until fully cooked through (depending how thick your strips are).
I like to serve with a side salad and Spaghetti with Walnuts and Brown Butter. (I'll post that recipe soon also)

Chicken Strips with Panko Crumbs and Smoked Paprika
Ingredients
- 2 chicken breasts (cut into strips)
- 1 cup Panko bread crumbs
- ¼ cup spelt flour (or all purpose)
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon white pepper
- ½ teaspoon dried basil
- ½ teaspoon sea salt
- 1 egg (beaten)
- Baking spray/Oil Spritzer
Instructions
- Preheat oven to 400 F.
- Combine bread crumbs, flour and all spices in a medium bowl.
- Whisk egg separately in a small bowl.
- Dip each chicken strip into egg, then flour mixture, coating well. (using one hand for wet and one for dry)
- Lay on baking sheet covered with silicone mat or parchment. Spray with baking spray, then bake for about 24 minutes, or until cooked through, flipping once halfway.
