Iced Brown Sugar Oat Milk Shaken Espresso | This homemade copycat version of the Starbucks Brown Sugar Shaken Espresso taste like an oatmeal cookie. This Starbucks copycat recipe has only a few ingredients including homemade syrup. Once you learn how to shake espresso you can make up your own flavors!

Is the brown sugar oat milk shaken espresso sweet?

I find the brown sugar oat milk shaken espresso a medium sweetness. Drinks like frappuccinos are much sweeter. With my homemade version, you can make it sweet as you want (or not sweet at all!). I prefer my drinks less sweet so experiment with the amount of syrup you add to yours.

What is in Starbucks Brown Sugar Shaken Espresso?

On its website, Starbucks lists the ingredients for a tall Brown Sugar Oat Milk Shaken Espresso as 2 shots of espresso, oat milk, brown sugar syrup, and cinnamon.

  • espresso: Starbucks uses a blonde espresso bean for their espresso shots. Lighter roasted beans mean more caffeine. I like a medium roast bean for my drinks because I like a bean with more flavor.
  • oat milk: Use an oat milk you like, I’ve tried both the Oat Milk by Silk and the Barista blend by Earth’s Own.
  • syrup: for the easy homemade syrup you’ll need water, brown sugar, and cinnamon
  • topping: if you want to take it up a notch you can top your drink with a brown sugar whipped cream. This is optional though, Starbucks doesn’t top theirs with whipped cream.

Substitutions

  • espresso: no espresso? Try a strong brewed coffee instead. You can use percolated coffee, french press, pour-over coffee, or even instant coffee as I do in my Iced Coffee with Instant Coffee recipe.
  • oat milk: try another milk if you don’t like oat milk as much.

Prep Tips

  • Make the brown sugar whipped cream and let it sit while you make the espresso and put the drink together. This way your espresso shot will be fresh to use.

First make the brown sugar syrup by mixing boiling water with brown sugar, cinnamon, and vanilla extract.

Whip the heavy cream with the brown sugar to soft peaks.

Add 1 cup of ice to a large jar with a lid. Pour in the espresso.

Shake the espresso for 30-60 seconds until it turns a lighter caramel color and turns foamy.

Pour the shaken espresso into a tall serving glass. You can add extra ice if you want to.

Tips for making a Brown Sugar Shaken Espresso

  • whipped topping: the brown sugar whipped topping is optional. Starbucks doesn’t include whipped topping as a base ingredient in its brown sugar shaken espresso. I like the addition though and I think it makes this drink taste like an Oatmeal Cookie Iced Latte – fun!
  • rich and creamy: the shaken espresso is foamy but for a more rich and thick iced coffee you can add some heavy cream if you prefer.
  • add-ins: I like to sprinkle ground cinnamon on top of the whipped cream for this recipe
  • shake it: use a large jar with a lid to shake the espresso with ice, turning it from a dark chocolate color to a caramel color.

What to serve with Shaken Espresso

I think a small baked good goes well with this shaken espresso as the drink itself isn’t overly sweet. Storage

Make this drink as needed. You can make the whipped topping earlier in the day and keep refrigerated until needed. The brown sugar syrup should last in the fridge for a week or two.

Ingredients
 
 

For the coffee:

  • 2 shots espresso or 1/4 cup strong coffee
  • 1 cup ice cubes
  • ½ cup oat milk
  • 2 tablespoons brown sugar syrup

For the syrup

For the brown sugar whipped cream

  • ½ cup heavy whipping cream
  • 2 tablespoons brown sugar

Instructions

  • First, make the syrup: In a small cup or jar, mix together the boiling water, brown sugar, cinnamon, and vanilla extract. Whisk until combined although the cinnamon won't fully dissolve. Set aside to cool.
  • Next, make the brown sugar whipped cream: Use a hand blender to whip the heavy cream and brown sugar together until you reach soft peaks so it sits nicely on top of the drink.
  • To make the drink: Make the espresso or coffee. In a large jar with a lid add the ice and the espresso. Add the lid and shake for 60-90 seconds. The espresso will lighten in color and become foamy on top. (Brewed coffee will lighten in color but won't foam quite as much.)
  • Add some extra ice to a tall glass. (I like extra ice, you can skip it if you want to.)
  • Pour the shaken espresso over the ice. Add 2 tablespoons of the brown sugar syrup and mix gently with a straw.
  • Add the oat milk and then the whipping cream. Sprinkle with cinnamon (optional) and add a straw. Serve.

Notes

No espresso? Try percolated coffee, french press, pour-over, or instant coffee instead.
The syrup makes enough for 4 drinks using 2 tablespoons each.
