This Fluffernutter iced coffee is inspired by the classic peanut butter and marshmallow sandwich, made with coffee, milk, and ice. Homemade peanut butter syrup and toasted marshmallow syrup give this iced coffee its sweet, nutty flavor and make it feel like a coffee-shop drink you can make at home.

I made this drink using two homemade syrups: peanut butter syrup and toasted marshmallow syrup, and the idea first came about a few summers ago from my cousins, who’d had something similar.

The peanut butter syrup is made with sugar, water, and creamy peanut butter. The toasted marshmallow syrup starts with marshmallows that are toasted before being melted into a simple syrup with vanilla.

Making the syrups yourself gives the drink much more of a homemade coffee-bar feel, and you can keep both in the fridge so you’re ready to make another iced coffee later.

The recipe itself is quick to put together once the syrups are made. I use either a double shot of espresso or ¼ cup of strong coffee, then add milk and a bunch of ice.

  • Strong coffee or espresso: I prefer espresso for its concentrated coffee flavor, but strong brewed coffee works just as well. You can also make iced coffee with instant coffee, but for special drinks like this, I really prefer the strong flavor of espresso.
  • Milk: adds creaminess and balances the strong coffee and sweet syrups. Use whatever kind you like. I prefer cashew or creamy oat milk over cow’s milk.
  • Peanut butter syrup: for the sweet, nutty peanut butter flavor that makes this an iced coffee version of a fluffernutter.
  • Marshmallow syrup: adds the toasted marshmallow flavor.

Tips for Making a Fluffernutter Iced Coffee

  • Mix the syrups with the hot coffee first. Don’t add the syrups directly to a glass full of ice. The hot coffee helps them dissolve properly before you chill the drink.
  • Adjust the sweetness. Two tablespoons of each syrup makes a fairly sweet drink. If that’s more sweetness than you like, start with 1 tablespoon of each and add more as needed.
  • Make the syrups ahead of time. Both syrups can be refrigerated, so you can make them ahead of time and quickly make the iced coffee.

Instructions

  1. First, make the peanut butter syrup and toasted marshmallow syrup if you don’t already have them prepared.
  1. Add the ice to a large glass.
  2. Combine the hot coffee or espresso with both syrups and stir well. This step is important because the warm coffee helps the syrups dissolve and combine evenly.
  3. Pour the coffee mixture over the ice.
  4. Add the milk and stir.

For the drink pictured here, I went a little further with the toppings and added melted marshmallow around the rim, marshmallow whipped cream, a toasted marshmallow, and a drizzle of peanut butter syrup.

The toppings are completely optional, but they make this a fun drink to serve when you want something a little more special.

For a less sweet drink, use 1 tablespoon of each syrup and add more to taste.
