Start by slicing the cucumbers. I use a mandoline for quick and even slices. You can use a knife instead and cut them thicker if you prefer.

Storage

This salad is best made fresh. I don't recommend storing it in the fridge for longer than a few hours because cucumbers are watery and will release moisture.

Can I make this Zaatar Cucumber Salad ahead of time?

It's best to assemble this cucumber salad just before serving because the cucumbers will start to release water, which can make the salad watery and less crisp over time.

Ingredients
 
 

Salad

  • 1 large English cucumber sliced
  • ¼ small red onion sliced
  • 2 tablespoons za’atar dressing below
  • salt and pepper to taste

Za’atar dressing

  • ½ cup olive oil
  • 3 tablespoons rose vinegar
  • 2 teaspoons honey
  • 2 teaspoons Dijon mustard
  • 2 tablespoons za’atar seasoning
  • 2 teaspoons dried mint

Instructions

  • Make the dressing by adding all ingredients to a jar or container with a lid and shaking well.
  • Slice the onions and soak them in ice water for 10 minutes for a more mellow flavor.
  • Slice the cucumbers.
  • Add the cucumber and onion to a bowl. Add the dressing and toss to coat. Serve.
