Cucumber Salad Garlic Toast is a quick and refreshing twist on toast that combines crisp cucumber slices with creamy mayonnaise and flavorful everything bagel seasoning, all served on top of crunchy garlic toast. This simple recipe is perfect for a light breakfast, lunch or appetizer.

This recipe was inspired by the cucumber salad trend and my everything bagel cucumber salad. Once I made that recipe, I did what I tend to do and put the whole thing on toast.

I love toast. I have a whole toast recipe category with many more recipes to come.

And let me tell you, there is something magical about the combination of the creamy mayo, punchy everything bagel seasoning, refreshing cucumbers, and savory crispy garlic toast.

Plus, only about 10 minutes to make it? Perfect.

Ingredients

  • cucumber salad: this is a mix of sliced cucumber, mayo, and everything bagel seasoning. That's it. I use my own everything bagel seasoning, but you can use any one that you love.
  • bread: I like these big pieces of sourdough from my local grocery store. One piece is a pretty big serving for me.

Substitutions

  • bread: try this on a sliced baguette to make this for a snack board or appetizer.

I use smaller garden cucumbers for this recipe because I have a lot of gifted cucumbers at the moment. If using an English cucumber you may need to add more mayo or everything bagel seasoning.

Instructions

Prep Tips

  • Preheat air fryer to 400°F (200°C).
  • You can also toast the bread in oven. If using a toaster, add olive oil after the bread is toasted.

While the bread is toasting you can make the cucumber salad, which is really quick. You just need to slice the cucumber (I use a mandoline) and then add the mayo and everything bagel seasoning. This takes about as long as it does to toast the bread.

In the recipe card, I wrote the timing for making the salad first and then the toast, but multitasking makes this quicker!

  1. Make the salad by combining the cucumber, mayo and seasoning. Mix well and season with salt and pepper.
Olive oil is drizzled on a slice of bread on an air fryer tray.
  1. Place the bread on the air fryer tray and drizzle with olive oil. Air fry for 4-5 minutes, or until toasty golden brown.
Garlic is rubbed on a slice of toast.
  1. Rub garlic on the warm toast.
Cucumber slices are place on toast.
  1. Add the cucumber salad to the toast and serve.

Tips for making cucumber garlic toast

  • Toast the bread until it's golden brown and crispy to provide a sturdy base for the cucumber salad.
  • Rub a cut garlic clove directly on the hot toast for maximum garlic flavor.
  • Assemble the cucumber salad garlic toast just before serving to maintain the crispness of the toast.

What to serve with everything cucumber salad garlic toast

For a quick weeknight dinner, pair this cucumber toast with minestrone or tortellini soup.

For a quick lunch, pair with a side salad or gochujang noodles. When I eat this for breakfast, I serve it as is.

Ingredients
  

For the cucumber salad

  • 1 cucumber thinly sliced *see notes
  • 1 tablespoon mayonnaise
  • 2 teaspoons everything bagel seasoning

For the toast

  • 2 large slices bread or 4 small slices
  • 1 clove garlic halved
  • drizzle olive oil

Instructions

Cucumber Salad

  • Slice the cucumber.
  • Add the cucumber, mayo, and everything seasoning to a bowl and mix well.
  • Taste and season with salt and pepper as needed.

Toast

  • Preheat the air fryer to 400℉ (200℃).
  • Drizzle the bread with olive and air fryer for 4-5 minutes, or until golden brown and toasted.
  • Rub the inside of the garlic clove over the toasted bread.
  • Add the cucumber salad on top of the toast and serve.

Notes

I use a smaller garden cucumber. English cucumbers are bigger - you may need more mayo and everything bagel seasoning. Adjust to taste.
No air fryer? Use an oven instead, or toast the bread in a toaster and then drizzle with oil.
