This recipe was inspired by the cucumber salad trend and my everything bagel cucumber salad. Once I made that recipe, I did what I tend to do and put the whole thing on toast.

- cucumber salad: this is a mix of sliced cucumber, mayo, and everything bagel seasoning. That's it. I use my own everything bagel seasoning, but you can use any one that you love.
- bread: I like these big pieces of sourdough from my local grocery store. One piece is a pretty big serving for me.
Substitutions
- bread: try this on a sliced baguette to make this for a snack board or appetizer.
I use smaller garden cucumbers for this recipe because I have a lot of gifted cucumbers at the moment. If using an English cucumber you may need to add more mayo or everything bagel seasoning.

Prep Tips
While the bread is toasting you can make the cucumber salad, which is really quick. You just need to slice the cucumber (I use a mandoline) and then add the mayo and everything bagel seasoning. This takes about as long as it does to toast the bread.
In the recipe card, I wrote the timing for making the salad first and then the toast, but multitasking makes this quicker!
- Make the salad by combining the cucumber, mayo and seasoning. Mix well and season with salt and pepper.
- Place the bread on the air fryer tray and drizzle with olive oil. Air fry for 4-5 minutes, or until toasty golden brown.
- Rub garlic on the warm toast.
- Add the cucumber salad to the toast and serve.

- Toast the bread until it's golden brown and crispy to provide a sturdy base for the cucumber salad.
- Rub a cut garlic clove directly on the hot toast for maximum garlic flavor.

For the cucumber salad
- 1 cucumber (thinly sliced *see notes)
- 1 tablespoon mayonnaise
- 2 teaspoons everything bagel seasoning
For the toast
- 2 large slices bread (or 4 small slices)
- 1 clove garlic (halved)
- drizzle olive oil
Instructions
Cucumber Salad
- Slice the cucumber.
- Add the cucumber, mayo, and everything seasoning to a bowl and mix well.
- Taste and season with salt and pepper as needed.
Toast
- Preheat the air fryer to 400℉ (200℃).
- Drizzle the bread with olive and air fryer for 4-5 minutes, or until golden brown and toasted.
- Rub the inside of the garlic clove over the toasted bread.
- Add the cucumber salad on top of the toast and serve.
