- Sweet Potatoes: Sweet potatoes roast well, getting tender on the inside and slightly crisp on the outside.
- Zucchini: Zucchini cooks quickly, so it’s added later to keep it from getting mushy.
- Bell Pepper: Bell peppers also cook quickly and are added later.
- Onion: Onions mellow out as they roast.
- Olive Oil: A good drizzle of olive oil helps everything roast properly, keeps the vegetables from drying out, and carries the seasoning across all of the ingredients.
- Za’atar Seasoning: Za’atar adds an herby, slightly tangy flavor with hints of sesame.
Substitutions
This sheet pan sausage and sweet potatoes recipe is easy to customize. Here’s what you can swap and still get great results:
- Sausage – Use any precooked sausage you like. Chicken sausage, turkey sausage, smoked sausage, or plant-based sausages all work.
- Sweet Potatoes – You can swap sweet potatoes for regular white potatoes or even baby potatoes.
- Bell Pepper – Any color of bell pepper will work here. Red, yellow, and orange are sweeter, while green peppers have a sharper, more bitter flavor.
- Yellow Onion – Red onions or white onions are fine substitutes.
- Za’atar Seasoning – If you don't have za’atar, swap it with Italian seasoning, Greek seasoning, or try my everyday seasoning.
- Garlic – Try adding garlic. To do this, slice the top of a head of garlic, add olive oil, and wrap it in foil. Add it in with the sweet potatoes.

- Try to cut everything the same size for even cooking.
- Add the more delicate zucchini and bell pepper later in the cooking time helps prevent them from over cooking and getting too soft.

Sheet Pan Sausage and Sweet Potatoes
Ingredients
- 2 precooked sausages I use vegan Field Roast
- 2 sweet potatoes cut into ½ - 1 inch cubes
- 1 zucchini sliced into thick half moons
- 1 bell pepper
- 1 red onion chopped into large chunks
- 3 tablespoons olive oil divided
- 1 tablespoon za’atar seasoning or your favorite seasoning
- ½ teaspoon salt if your seasoning mix doesn't include salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Place the potatoes and onion on the sheet pan. Drizzle with olive oil, sprinkle with spice mix, season with salt and pepper, and then mix.
- Place sheet pan in the oven and bake for 35 minutes, stirring halfway.
- In a medium bowl, mix the sausage, zucchini, and bell pepper with oil, za'atar, salt, and pepper.
- Remove the sheet pan from the oven and toss the sweet potatoes. Add the sausage and vegetables to the sheet pan, spread them evenly, and return the pan to the oven.
- Bake 15-20 minutes. Check the vegetables for doneness. The sweet potatoes should be fork-tender.
