  • Chickpeas – I like using dried chickpeas for hummus, and I cook my chickpeas in the Instant Pot. This makes them really soft, and the skins come off easily, making the hummus super smooth! Canned chickpeas also work fine.
  • Tahini – makes the hummus creamy and rich.
  • Pickle juice – for extra tangy dill pickle flavor.
  • Dried dill – more pickle flavor.
  • Ice cubes – helps whip the hummus so it gets extra creamy.
  • Dill pickles – chopped and stirred in for texture and flavor.

Substitutions

  • Make it spicy! I like to use spicy pickles for a bit of heat when I make this. You could also add some cayenne, red pepper flakes, or hot sauce to make it a bit spicy.

How to make dill pickle hummus

Prep Tips

This recipe blends best in a strong food processor, but a food processor can work too.

  1. Add the chickpeas, tahini, pickles, pickle juice, garlic, dried dill, salt, and olive oil to a food processor.
  2. Blend until mostly smooth, scraping down the sides as needed.
  3. Add the ice cubes one at a time, blending in between.
  4. Blend for 4-5 minutes, until super smooth.
  5. Taste and adjust salt or pickle juice if needed.
  6. Spoon into a bowl and top with the reserved chickpeas and chopped pickles.

Storage

Store in an airtight container in the fridge for about a week.

  • 2 cups chickpeas drained and rinsed (reserve 1/4 cup for garnish)
  • cup chopped dill pickles reserve 1 tablespoon for garnish
  • ¼ cup tahini
  • 3 tablespoons pickle juice
  • 2 cloves garlic
  • 2 teaspoons dried dill
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • 4 to 5 ice cubes

Instructions

  • Add the chickpeas, tahini, pickle juice, pickles, garlic, dried dill, salt, and olive oil to a food processor.
  • Blend until mostly smooth, scraping down the sides as needed.
  • Add the ice cubes one at a time, blend in between additions.
  • Blend the hummus for 4-5 minutes after all ice is added to ensure it’s light and creamy.
  • Transfer to a bowl and top with the reserved chickpeas and chopped pickles before serving.
