Easy overnight oats with simple ingredients like pumpkin puree and homemade pumpkin pie spice mix. If you're craving the flavors of fall, try this overnight oats recipe.
In a 4-cup measuring cup, pour in the coconut milk and then add enough water to make 2 cups of liquid. Add the pumpkin puree, brown sugar, and vanilla extract and whisk together.
Add the oats, chia seeds, spice mix, and salt. Mix well. Let sit 5 minutes and then mix again.
Place on lid and set in the fridge overnight.
For the Pumpkin Pie Simple Syrup
In a small pot, mix together the water, sugar, and spice mix and bring to a boil.
Turn the heat down and keep at a simmer for 5 minutes until thickened and the sugar has dissolved. Remove from the heat and add the vanilla extract.
Let cool and then store in the fridge or use.
To Toast the seeds
Add the seeds to a dry skillet over medium heat. Cook, stirring often, for about 5-6 minutes until the seeds are lightly browned and toasted. Set aside to cool.
To Serve
Portion the oats into a bowl or cup.
Optional: Add syrup and pumpkin seeds.

texture: I like adding texture to my overnight oats by using half large flaked oats instead of all rolled oats. I don't like soft oats. If you do, use all rolled oats.
garnish: the oats are great themselves and very filling and nutritious but the garnishes make it fun! This is another way to add texture, by adding nuts, seeds, or granola on top.
