Whip the avocado in a food processor.
Add the melted white chocolate, peppermint extract, vanilla extract, and milk. Refrigerate until needed.
Add the avocado pudding to a glass.
Add the chia pudding. Top with coconut whipped cream (optional). Serve or cover and refrigerate for 4-5 days.
