  1. Season and bake: Toss the fries with olive oil, salt, and pepper. Arrange them on a baking sheet in a single layer and bake until golden and crisp, flipping halfway through. In the last five minutes of baking, sprinkle the dukkah over the fries before returning them to the oven.
  2. Make the sauce: In a bowl, whisk together yogurt, tahini, lemon juice, garlic, cumin, parsley, chives, salt, and pepper until smooth. Adjust seasoning to taste.

Storage

Assembled dukka fries should be eaten right away. The single elements can all be meal-prepped ahead and stored in the fridge.

  • 2 lbs russet potatoes cut into 1/2 inch sticks
  • 2 tablespoons olive oil
  • ¼ cup dukkah see below
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Tahini Yogurt Sauce

  • 1 cup plain Greek yogurt
  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic micro planed or minced
  • ½ teaspoon ground cumin
  • 1 teaspoon dried parsley
  • 1 teaspoon dried chives
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Toppings

  • Season and bake: Toss the cut potatoes with olive oil, salt, and pepper. Arrange them on a baking sheet in a single layer and bake until golden and crisp, flipping halfway through (about 25-35 minutes, depending on how thick they are cut). Almond Dukkah Recipe:
  • ¾ cup slivered almonds
  • ¼ cup cashews
  • ¼ cup sesame seeds
  • 1 tablespoon fennel seeds optional
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • ¼ teaspoon cayenne powder
  • heavy pinch kosher salt
