A refreshing summer cocktail with pineapple juice, coconut water, lime juice, and tequila. Easy to scale up and make a pitcher of drinks, just don't add the ice.
To rim the glass: Place the Tajin on a small plate. Swipe the rim of the glass with a halved lime or with simple syrup. Stamp the glass in the Tajin to coat. Set aside.
Add ice, tequila, pineapple juice, coconut water, and lime juice to a cocktail shaker. Shake for 30-60 seconds.
Add ice to the rimmed glass. Pour in the shaken cocktail mix. Serve.

To make a pitcher beforehand, combine only the pineapple juice, coconut water, lime juice, and tequila in a large pitcher in the fridge. Before serving, stir the cocktail mixture again, rim glasses, add ice, and add the cocktail mix and serve.For maximum coconut flavor, try coconut tequila instead.Add triple sec for a more traditional take on a margarita.Use coconut milk instead of coconut water for a creamier result.
