Prep the flatbread: Add a drizzle of oil to the flatbread and spread it around with a pastry brush so that it covers the whole flatbread.
Sprinkle a bit of salt and pepper.
Add the caramelized onions and spread them around.
Sprinkle the mozzarella cheese evenly over the flatbread. Break little pieces of the goat cheese off and dot them around.
Slice the figs and place around the flatbread.
Bake: Bake the flatbread at 350°F (180°C) for 10-15 minutes or until the cheese has melted and browned slightly.
Serve the flatbread pizza: Cut the flatbread into about 8 pieces.
To garnish: Mix together the honey and sambal oelek. Drizzle over the pizza. Sprinkle over the pistachios. Sprinkle over fresh oregano.

Notes
Don't like goat cheese? Try just the mozzarella or add shredded Asiago or Havarti.Don't like spicy? Skip the hot honey. Try balsamic glaze.Don't like pistachios? Skip the pistachios or try chopped walnuts instead.Flatbread size will vary based on your grocery store. Mine was 250 grams and measured about 8 inches by 12 inches. The amount of cheese you'll need may vary depending on the size of your flatbread and your personal taste.I use fresh oregano to garnish a lot of my recipes because I grow it. Use your favorite fresh herb or skip it. Oregano flowers are edible. They taste kind of like a more mellow oregano.
