Try these pumpkin pie overnight oats for a make-ahead breakfast for busy mornings!

chill Time: 4 hrs

coconut milk pumpkin puree vanilla brown sugar oats chia seeds pumpkin pie spice salt pumpkin spice syrup toasted pepitas

Ingredients

Mix the coconut milk, water, pumpkin puree, vanilla, and brown sugar.

Add oats, chia seeds, pumpkin pie spice and a pinch of salt.

Mix well and let sit for 5 minutes while the oats and chia seeds soak up liquid.

Mix again and refrigerate overnight or for at least 4 hours.

Make the syrup by simmering water, sugar, vanilla, and pumpkin pie spice. Let cool

Toast the pepitas.

To serve, add oats to a cup, jar, or bowl and add a drizzle of the syrup.

Add toasted pepitas and serve.
