½cupyogurt or sour creamthinned with splash of water
2Roma tomatoesdiced
4green onionssliced
2avocadossliced
pickled red onions
pickled jalapeno
cilantro leaves
Instructions
For the Fries
Sprinkle the fries with the taco seasoning and then bake them according to package instructions, usually around 20 minutes. In the meantime, make the taco meat and prep toppings.
For the Taco Filling
To make the taco meat, heat a large skillet over medium-high heat.
Add oil and onion and cook for about 5 minutes, until starting to soften and brown. Add beef and season with salt and pepper. Cook, stirring occasionally until browned, about 5 minutes.
Drain any excess fat and then add the spices and toast for about a minute. Add tomato paste and stir through. Add water, bring to a boil, and then turn down to simmer until needed. The sauce will thicken.
For the Toppings
Prep the topping while the fries and the beef cook: dice the tomato, shred cheese, slice green onions, thin yogurt with a splash of water, slice avocado, and pull cilantro leaves off of stems.
To Serve
Plate fries. Add beef. Add cheese. Add your favorite toppings. Drizzle with yogurt. Serve.
Notes
Notes – I use my Taco Seasoning recipe.2 tablespoons chili powder 1 tablespoon ground cumin 1 teaspoon ground coriander 1 teaspoon smoked paprika ½ teaspoon dried oregano ½ teaspoon onion powder ½ teaspoon garlic powder 1 teaspoon ground black pepper ¼ teaspoon cayenne pepperSubstitutions – Use whatever toppings you usually use on tacos like diced bell pepper, shredded lettuce, slaw, and salsa.Storage – The toppings will all store in the fridge for a few days but not the assembled dish – the fries will get soggy. Store toppings in the fridge and just make fries when needed.
