Peel the garlic cloves. (Do this quickly by putting them in a container with a lid and shaking.)
Add cloves to a food processor and pulse until finely chopped.
Portion into small containers or freezer trays. I like to lay it flat on plastic wrap.
Freeze until ready to use.

Do not over-process into a pasteGarlic can be used directly from frozenServing size is 150 because I get about 15 heads of garlic in a 1 kg bag, with about 10 cloves per head.
