Make the dough. Mix the flour, yeast, sugar, and salt together in a large mixing bowl or the bowl of a stand mixer. Add the oil and mix well. Add the water and knead into a smooth ball, about 6-8 minutes in a stand mixer. This will take a little bit longer by hand.
Cover the dough and allow it to rise until doubled in size.
For the tree
Once the dough has risen, cut it into quarters. Cut each quarter into 8 equal pieces. You should have 32 pieces in total.
Flatten each dough ball and add a piece of cheese inside. Gather the stems and twist them to close the dough ball. Roll the dough ball on the counter with a cupped hand to smooth and round it out. Set aside and repeat with all of the dough and cheese.
Line a baking sheet with parchment paper.
Start arranging the dough balls on the prepared baking sheet. The bottom row should have 7 balls. Center all of the rows of dough balls. Continue with rows using 6, 5, 4, 3, 2, and then 1 dough ball. You'll have a large triangle of dough balls plus 4 extra. I arrange these at the bottom i a square to act as a tree trunk.
Preheat the oven to 425°F.
Cover the dough with a towel and let rise for about 20 minutes while the oven preheats.
Whisk the egg in a small bowl and brush it over the dough.
Bake for 20-25 minutes, or until golden brown and cooked through.
For the topping
Brush the rolls with melted butter. Sprinkle with the cheese and the fresh herbs. Serve hot.
