These Blackstone quesadillas will thrill the whole family. From the crispy grilled tortillas to the savory beyond beef and melty cheese, to the tangy burger sauce, this recipe is a winner for this summer! Like the TikTok Big Taco, but bigger and better.
Mix all of the sauce ingredients together in a bowl and set aside.
For the Quesadillas
Prep the tortillas: Divide the beyond beef into 4 portions and spread one portion onto each tortilla. Spread it thin.
Prep all toppings before you even turn the grill on. Bring everything outside when you start to grill.
Preheat the grill to medium - medium-high heat.
Add oil to the grill and add the onions. Let them get a head start on cooking for a few minutes. Stir them occasionally while making the quesadillas.
Add the tortillas to the grill with the beyond beef side down. Cook for about 4-5 minutes or until beef is cooked through.
Scrape underneath the tortillas to loosen the beef and then flip each tortilla.
Add cheese and let it cook for another 2 minutes or so until the cheese starts to melt. You can also use a basting cover (or a few of them) to cover the quesadillas and let the cheese melt. It's not necessary if you don't use a lot of cheese.
Turn the heat off on the grill as you quickly top and fold the quesadillas.
To top the quesadillas: add some sauce, pickles, and then lettuce. Put the pickles and lettuce only on one side because you'll be flipping the other side over.
Use the spatulas to help you fold each quesadilla in half.
Remove the quesadillas and serve them hot and cut them into two or three pieces.
Remember to clean your grill!
