Bake the fries according to your package instructions.
Chop the bacon and transfer it to a skillet. Set the skillet over medium heat and cook the bacon until it reaches your favorite crispiness level (total crisp for me!). Stir occasionally. This will take about 10 minutes and you can make the cheese sauce while it cooks.
In a medium saucepan, melt the butter. Add the flour and whisk together. It’ll be thick and kinda saucy. Add the dijon and paprika. Now the mixture will be thick and chunky. That’s fine.
Add milk slowly, while whisking. This will take a minute or two, it’s fine, you’ll get a really smooth sauce in the end.
Let the milk heat for 2-3 minutes. Add the cheese. Whisk until melted and then use it or keep it over low heat to keep warm.
