Potato tacos are made with corn tortillas and filled with a mashed potato mixture and then fried until crispy.

potatoes butter plain Greek yogurt shredded cheese corn tortillas oil, for frying toppings: pico de gallo, cheese, salsa, yogurt, cilantro, crema, lime, avocado
COOK TIME: 5 MIN
Mash the boiled potatoes with butter, yogurt and cheese.
Stuff the tortillas with the potato mix and fold in half.
Fry the tacos for 2 minutes per side, or until crispy.
Serve hot, garnished with toppings of your choice. (see ingredients slide)
