Masala chai is an Indian beverage made with spiced, milky, black tea. Whole spices are toasted and simmered before steeping in tea.
Prep Time: 3 Min
cook Time: 15 min
ginger cinnamon sticks whole cloves anise star cardamom pods allspice berries black peppercorns nutmeg vanilla black tea bags brown sugar
Ingredients
Toast the spices over medium heat for about 3 minutes or so, until fragrant. Be careful not to burn them.
Add the water, and bring to a simmer.
Grate in the fresh nutmeg.
Add the brown sugar.
Stir and simmer for about 15 minutes.
Turn the heat off and add the tea bags. Steep for 5 minutes.
Add the vanilla extract.
Remove the tea bags and whole spices. Don't squeeze the tea bags - this can make your tea bitter. Strain if you prefer.
Use 1:1 with either hot or cold milk or water. Makes 8-10 drinks. Mixing 1/2 cup concentrate with 1/2 cup of boiling water will make a hot chai. See my blog to make an Iced Dirty Chai Latte.
