Brown butter is melted butter, cooked long enough for the milk solids to brown and fall to the bottom of the pot, leaving a rich and nutty liquid behind.

Add butter to a light-colored skillet over medium heat.  A light-colored pan helps you see what is happening.

Stir the butter as it melts.

The butter is done when golden with brown bits on the bottom.

Move to a bowl to stop it cooking.

Peel the potatoes and cut them evenly. Boil in salted water for 10-15 minutes, until fork tender.

Drain and mash the cooked potatoes.

Add the rest of the ingredients, keeping some brown butter for garnish.

Smooth the potatoes in a bowl, leaving some valleys for the butter to stream into.
