potatoes vegetable stock dried rosemary dried thyme salt and pepper
Ingredients
Peel and chop the potatoes. Bring to a boil in a large pot of salted water. Cook for 10-15 minutes, until fork tender.
Add the herbs and season with salt and pepper.
Puree half or all of the soup using an immersion blender or stand blender. Be careful - it's super hot!
Heat again and then serve. There is no need for heavy cream, the pureed potato gives the soup a creamy texture.
