Ingredients

Peel and chop the potatoes. Bring to a boil in a large pot of salted water. Cook for 10-15 minutes, until fork tender.

Add the herbs and season with salt and pepper.

Puree half or all of the soup using an immersion blender or stand blender. Be careful - it's super hot!

Heat again and then serve. There is no need for heavy cream, the pureed potato gives the soup a creamy texture.

TIPS! Texture: for a more chunky potato soup, only puree half of the soup. Seasoning: I love the combo of rosemary and thyme, but you can try an Italian seasoning mix instead.

TIPS! Stock: Vegetable stock keeps this soup vegan! Use chicken stock if you prefer. Garnish: Try adding bacon bits (or vegan bacon!), sharp cheddar cheese (or vegan cheese), sour cream, croutons, fresh parsley, green onions, or nuts and seeds.
