Preheat your oven to 400F (200C)
First, either cut your squash in half and then cut the ends off, or cut the ends of first and then stand the squash on the large end for stability while you cut it in half. Peel it.
Cut the squash into 1 inch cubes.
Lay squash on lined baking sheet, drizzle with oil and season with salt and pepper.
Bake for about 30 minutes, or until a fork pierces a cube easily. Bake for 10 minutes longer for lightly caramelized squash, if desired.
Eat the squash as it is, or use it in your favorite recipe.
