Avocado Bagel Sandwich
This is what breakfast dreams are made of. A toasted bagel with feta, yogurt + sriracha sauce, fresh tomato, avocado, and spinach will start your day off with a spicy bang and keep you feeling full and satisfied.
- 1 bagel toasted
- handful of spinach
- 3 slices Roma tomato
- ½ medium avocado sliced
- salt and pepper to taste
- 2 tablespoons feta cheese
- 3-4 tablespoons greek yogurt
- 1 teaspoon sriracha hot sauce omit if you don't like spice
To make the spicy feta yogurt sauce
To assemble the bagel
Spoon some of the feta yogurt sauce on one side of the toasted bagel.
Add spinach, then avocado, and then tomato.
Season with salt and pepper.
Add the other half of the bagel on top to make a sandwich. Cut in half if you prefer. Serve.
Notes- The sauce makes well more than you need for this recipe but you'll need to make at least this much to be able to blend it. Nutrition facts are based on 1 tsp yogurt to 1 tsp feta which is about how much you would use per bagel.
Substitutions - Omit the yogurt sauce and use cream cheese instead. Swap the spinach for arugula, romaine, or iceberg lettuce. Swap the tomato for cucumber.
Storage - Would stay fresh for a few hours wrapped in plastic probably. I always eat mine immediately.
