Peanut Butter Banana French Toast Roll-Ups

  • 6 slices bread
  • 6-9 tablespoons peanut butter
  • ½ large banana
  • ½ cup milk
  • 2 large eggs
  • oil for frying
  • syrup for dipping


  • Cut the crust off the bread slices. You can stack two or three slices to make it go quicker.
  • Spread a tablespoon or two of peanut butter on each piece of bread.
  • Cut the banana into half-moon shapes. These are easier to roll than full slices.
  • Place the banana pieces along one end of the bread. Roll the bread up, starting at that end.
  • Heat a frying pan with a few tablespoons of oil over medium heat.
  • Mix together the egg and milk. Dip each roll into the egg mixture and then place seam side down in the frying pan. Fry for a few minutes on each side until all sides are cooked and golden brown. Serve with syrup or plain.


  1. Try other fillings like different fruits and other kinds of nut butter.
  2. To fancy it up a bit, add vanilla and cinnamon to the egg mixture.  Roll the finished rolls in a cinnamon-sugar mixture.
