Pickled Red Onions
Pickled Red Onions are my favorite Mexican inspired condiment – great on everything from burgers, to toast, to curries.
onion, pickled, red
red onion, sliced
vinegar (your choice - white, apple cider, etc)
granulated white sugar
Mexican oregano (optional)
Peel and slice the onion.
Combine vinegar, lime juice, salt, sugar and oregano in a jar with a lid. Add the onions and refrigerate for at least a few hours.
Use whichever vinegar you like. I like a combination of white vinegar, some apple cider and some lime juice. Cut it with water if you prefer.
