Roasted Butternut Squash Hummus

Butternut Squash Hummus - If you have extra butternut squash left over, turn it into this flavorful hummus.

  • Half of a butternut squash roasted, cubed
  • 1 19 oz can chickpeas, drained and rinsed
  • 2 tablespoons tahini
  • 1 large clove garlic
  • ½ teaspoon curry powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup water approx. for thinning


  • Add all to food processor (or mash by hand, chopping garlic clove first)
  • Thin with water until desired consistency is reached.
  • Serve.
