    If you're wondering what to serve with roasted butternut squash, I'll give you 32 options in this blog post. I can recommend hearty salads, more roasted vegetables, and delicious main dishes.

    Roasted butternut squash is a tasty and nutritious side dish that goes well with many other dishes. Butternut squash is easy to roast and can be used in several ways, from cubes to mashed, to pureed.

    When you're trying to prepare an easy weeknight dinner, start with my simple roasted butternut squash recipe and then choose from this list of delicious sides - from homemade ravioli, to hummus, to oven-roasted vegetables.

    Meal planning can be a tricky task but I like to break it down into simple categories. What do I want to eat and what flavors do I want to include?

    When deciding on what to eat with my roasted butternut squash recipe, I think about flavor. Do I want something super savory with thyme and rosemary? Something Tex-Mex inspired with chipotle chili powder?

    Or maybe I'll toss it in a grain bowl and add some roasted salmon or crispy fried oyster mushrooms.

    How do you Roast Butternut Squash?

    To roast squash:

    1. Preheat the oven to 400°F (200°C).
    2. Peel the squash and then cut it half lengthways.
    3. Scoop out the seeds.
    4. Cut the squash into cubes.
    5. Toss the cubes in olive oil and season with salt and pepper. Add any other seasoning you like.
    6. Roast on a baking sheet for about 30 minutes or until fork tender.

    Butternut squash is so versatile you can use it in recipes like a hummus, or alongside other recipes on your dinner table.

    I have a few favorite ways to use butternut squash and first on my list is in my curried butternut squash hummus. The sweet squash pairs so well with savory curry powder in my silky smooth hummus recipe.

    You can also use butternut squash in veggie burger recipes, in soup recipes, in pasta sauce, or by just adding the roasted cubes to your favorite pasta dish.

    To use butternut squash in hummus recipes, roast it until tender (instructions above), and then simply add it to a food processor with your other ingredients. Roasted butternut squash adds a sweet, slightly caramelized flavor to your hummus.
