To roast squash:
- Preheat the oven to 400°F (200°C).
- Peel the squash and then cut it half lengthways.
- Scoop out the seeds.
- Cut the squash into cubes.
- Toss the cubes in olive oil and season with salt and pepper. Add any other seasoning you like.
- Roast on a baking sheet for about 30 minutes or until fork tender.

Butternut squash is so versatile you can use it in recipes like a hummus, or alongside other recipes on your dinner table.
I have a few favorite ways to use butternut squash and first on my list is in my curried butternut squash hummus. The sweet squash pairs so well with savory curry powder in my silky smooth hummus recipe.
You can also use butternut squash in veggie burger recipes, in soup recipes, in pasta sauce, or by just adding the roasted cubes to your favorite pasta dish.
To use butternut squash in hummus recipes, roast it until tender (instructions above), and then simply add it to a food processor with your other ingredients. Roasted butternut squash adds a sweet, slightly caramelized flavor to your hummus.
One of the easiest ways to incorporate more vegetables (and a variety!) into your diet is with grain bowls. Meal-prepping a bunch of vegetables, grains and proteins will set you up for an entire week. Try this with sweet potatoes, butternut squash, and salad greens.
