    Slow Cooker Salsa Chicken

    Slow Cooker Salsa Chicken - Quick and easy, three ingredient slow-cooker chicken, perfect for simple weeknight meals, wrapped up in a tortilla with refreshing cucumber.

    If you made my Southwest Seasoning Spice Mix from my last post, then you’re already a step ahead on this recipe.   If you make my red salsa recipe or have pretty much any red salsa in your fridge, and a couple chicken breasts, then you’re ready to go.

    How to Make Slow Cooker Salsa Chicken

    Honestly that’s it for ingredients.  How easy? The result is a flavorful, hands-off, healthy dinner recipe.  Just place the chicken breasts on the bottom of your slow cooker.  Sprinkle over the southwest spice mix.  Add the salsa.  Season with salt and pepper.  Cook on high for about 3 hours.  On low, I’m guessing it would probably be about 7 hours, but I’ve only ever cooked it on high.

    Once the chicken is done, serve it however you want.  I usually serve it in a wrap topped with vegetables. For these photos I added some cucumber, red onion and cilantro.  It would be great with some refried beans spread on the wrap and some corn and diced tomato.  You could also add it to a bed of rice with some vegetables.   Enjoy!     Ingredients
      

    • 4 chicken breasts
    • 1 16 oz jar salsa
    • 1 tablespoon southwest seasoning mix
    Prevent your screen from going dark

    Instructions
     

    • Lay Chicken breasts on the bottom of the slow cooker. Sprinkle with fajita mix. Top with salsa. Cook on high for 3 hrs, or until chicken is cooked through.
      Remove chicken with tongs, to a cutting board. Pull apart with 2 forks, then add back to salsa mix in the crockpot. Serve as you like.

      Believe it or not, I love to add salsa to my chicken dishes though I never tried it in the slow cooker. Looks delish.
