Ok, I'll admit it. These easy sesame noodles are sometimes my DINNER, not my side dish.
They are just really good and really easy and I have a habit of working on my computer all day, or making recipes all day and then I need a quick and easy dinner.
And if I'm recipe testing brownies and cookies all day? I need something as a starter before 'test eating' dessert.
Also, noodles are so comforting and I never pass on noodles, or the opportunity to use chopsticks.
The sauce is both delicious and easy to make. You can pair the noodles with steamed or roasted broccoli and carrots for a full vegetarian meal.
Add panko chicken strips or air fryer coconut chicken on the side, for protein and you'll be set up for quick and easy meal good for any night of the week.

- noodles: use your favorite noodles. I like the really thick udon noodles or spaghetti/spaghettini noodles for this recipe. Capellini or linguini would be good as would thin udon noodles.
- garlic and ginger: to start off with a base of flavor. Don't feel like chopping? Use garlic powder and ground ginger instead.
- sauce: soy sauce for umami saltiness, vinegar for acidity and brown sugar for sweetness.
- sesame oil: you'll finish the dish off of heat with sesame oil for a nutty flavor.

- Prepare the noodles according to the package instructions.
- Heat a teaspoon of oil in a skillet or sauce pan over medium heat.
- Add the garlic and ginger and cook for a minute or so, until fragrant and browning. Add the soy sauce, vinegar, and brown sugar. Stir.
- Drain the noodles and add them to the sauce. Heat through.
- Remove from heat and stir through the sesame oil and option sriracha sauce.
- Serve garnished with sliced green onions and toasted sesame seeds.

- Customize the noodles by adding peanut a spoon or two of peanut butter to the sauce. Add chicken or shrimp or stir-fried vegetables.

Ingredients
- ½ lb noodles (I like spaghettini)
- 1 teaspoon cooking oil
- 3 cloves garlic (minced)
- 2 teaspoon fresh ginger (minced )
- ¼ cup soy sauce (low sodium)
- 2 tablespoons rice vinegar
- 1 tablespoon brown sugar
- 1 tablespoon sesame oil
- For optional garnish: sesame seeds (sliced green onions, Sriracha hot sauce)
Instructions
- Cook your choice of noodles according to package directions.
- In a skillet, heat the oil over medium heat.
- Add the garlic and ginger and cook for a minute or two until fragrant and turning golden.
- Whisk together the soy sauce, vinegar, and brown sugar, and carefully add to the skillet. Stir well. Keep warm over medium-low heat.
