Dragon fruit Margarita | This dragon fruit margarita is a blended margarita using vodka instead of tequila and a blend of frozen fruit including red dragon fruit, passion fruit, and pineapple. My dragon fruit margarita recipe takes only minutes to blend, using ice and frozen fruit and no liquid to achieve a super thick frozen margarita in a beautiful bright pinky purple color.
Margaritas, whether you make them with vodka or tequila, or on the rocks or blended like this dragon fruit margarita - are a classic hot weather cocktail.
To make this margarita I use frozen red dragon fruit - a tropical cactus fruit - this is easy to find in my larger grocery stores. Dragon fruit is also called pitaya.

What does dragon fruit taste like?
Dragon is mild in flavor a slightly sweet. For this dragon fruit margarita recipe, I have used frozen red dragon fruit.
What is a frozen margarita?
There are two ways to serve margaritas. A margarita on the rocks is served with the liquid over whole ice cubes. A frozen margarita is prepared by blending the liquid with ice cubes into a slushy consistency.
How do you make frozen margaritas thicker?
The trick to a thick blended margarita is to use ice instead of adding liquid and use a powerful blender.
I use the Ninja Kitchen System blender and it blends frozen fruit with ice with no problems.

- vodka: as always, Tito's Vodka is my go-to for vodka cocktails - use your favorite vodka or try tequila instead of vodka for a more typical margarita.
- frozen fruit: I use a bag of frozen mixed fruit including frozen red dragon fruit, frozen passion fruit, and frozen pineapple.
- simple syrup: In testing, I found the drink a bit too tart for me because I used a frozen fruit mix - the passionfruit and pineapple lent a tart flavor. The drink needed a bit of sweetening to balance it. Add more or less simple syrup, according to your tastes and your frozen fruit mix.
- ice: using ice (and frozen fruit) instead of adding liquid keeps your blended margarita super thick.

This is a frozen margarita made completely in a blender. I use a pretty powerful blender - the Ninja Kitchen system - and I can blend this margarita with no problems.
Blenders that aren't as powerful might have more trouble because there isn't much liquid added to this drink - just frozen fruit and ice.
If your blender has trouble blending, try scraping the sides down every so often and adding a tablespoon of water at a time until it blends smooth.
Use frozen dragon fruit. My mix also included pineapple and passion fruit. I used mostly dragon fruit.
Add ice to a blender.
Add the frozen fruit.
Next, add the vodka (or tequila.
Add simple syrup if using.
Add lemon juice.
Blend everything together, letting the blender run long enough to blend everything smoothly.
If your blender is having trouble blending even after a few minutes, try scraping down the sides and trying again. If it still has trouble, add water, a tablespoon at a time.
Pour the blended margarita into your favorite glass.
Pour a little taller than the edge, there will be air bubbles.
To get rid of the air bubbles, use a stir stick or straw to mix.
Serve the margarita with wide straws and orange slices on the side for a fun look.
MARGARITA TIP: Salt the rim of the glass before pouring the drink. Run an orange slice around the rim to wet it. Sprinkle salt on a plate and roll the rim of the glass in the salt to coat it.
Substitutions
> Don't like dragon fruit? Use another frozen fruit or try my mango margarita.
> Don't like vodka? Use tequila instead for a more typical margarita.
> Don't want to use simple syrup? Try agave syrup.
Equipment
I use my blender jug from my Ninja Kitchen System, which I really love. This is a powerful blender and blends frozen fruit and ice together with no problems.
I use my favorite blue-rimmed glasses and green-rimmed shot glass that I bought in Mexico.
Storage
Make this drink as needed - they will melt if you make them too much ahead of time.
Margaritas will freeze most of the way in the freezer - but not quite all the way because of the alcohol. Try freezing the blended drink in ice cube trays and blend when needed. (I haven't tried this yet.)

- 1 tablespoon lemon juice

Instructions
- To blend: Add all ingredients for the margarita to a blender jug and blend until smooth.If your blender has a hard time even after a few minutes, try stopping to scrape down the sides. If it still has a hard time, add a tablespoon of water at a time until blended.
- To garnish: Wet the rim of a glass with an orange slice. Sprinkle salt on a plate and roll the rim of the glass in the salt to coat. Pour the drink into the glass and serve with an orange slice and wide straws.
