So, toast is kind of my thing. I've even written a toast recipes eBook. I love dreaming up new toast ideas. Why? Because bread is amazing and adding ingredients like vegetables to toasted bread means we can have as much as we want, right?
Yes, it does. Which leads me to my next point, and that is - dessert toast. Not French toast. Toast.
I'm talking about combining the irresistible flavors of baklava, which is the best dessert on the planet, with sweetened goat cheese and spiced nuts and layering it on crispy sourdough bread.
This recipe is so easy that I prepped all of the parts and brought it on our girl's camping trip. If you have a grate, toast is easy to make over the fire. Then you just top it with the goat cheese and the nuts. Chef's kiss.
This recipe is inspired by a Turkish baklava cheesecake recipe by Refika on Youtube.

- bread: I like big slices of sourdough for this recipe but any bread should work. Use your favorite.
- goat cheese: not traditional in baklava by any means but this recipe is inspired by baklava cheesecake the sweetened goat cheese adds flavor, creaminess, and gives the nuts something to stick to.
- honey: to sweeten and add flavor like the syrup used in baked baklava.
- pistachios: baklava is made with a mixture of nuts but to simplify this recipe I chose pistachios.
- spices: Cinnamon and nutmeg bring a warm flavor. Some baklava recipes use orange in the honey syrup but I don't include that here for ease. You can add some orange zest to the nuts or cream cheese mixture.
Substitutions
- pistachios: Try walnuts or a mixture of nuts like pistachios, almonds, or walnuts.
- goat cheese: Try cream cheese, whipped cottage cheese, or ricotta instead. I haven't tested it but I have a toast recipe with ricotta in my toast eBook.
For easy meal prep, make the sweetened goat cheese and the nuts and store them separately in the fridge for 3-4 days.

Prep Tips
If using cream cheese let it sit on the counter until soft, about half an hour to an hour.
- Add the spices to the goat cheese.
- Add the honey.
- Whip the ingredients together until well combined.
- Add the honey and spices to the nuts along with a splash of water to loosen it. Stir.
- Spread the goat cheese mixture on the the toast.
- Add the pistachio mix. Serve.
Tips for making baklava toast
Storage
Make the toast as needed. You can store the cheese mix and the nut mix in the fridge in their own airtight containers for 3-4 days.
If using cream cheese, leaving it at room temperature to soften will make it easier to spread.

- Toast the bread.
- Combine the cheese ingredients in a bowl and whip them or use a whisk to combine.
- Combine the nuts ingredients in a bowl and stir to combine. Add a teaspoon or two or water to loosen the mix.
- Spread the cheese mix on the toast and then spoon over the nuts. Serve.

What the heck!?!?! This was SO good. Sure is a nice swtich from my old avocado toast. This was super easy and delicious! I'll still have the avocado, but this is a great option for a change of pace. 🙂
