Brown butter is melted butter, cooked long enough for the milk solids to brown and fall to the bottom of the pot, leaving a rich and nutty liquid behind.

Ingredients
Brown the butter. Heat a small pan over medium heat and add the butter. Cook for about 10 minutes or until brown bits sink to the bottom and the butter smells nutty and is amber/brown in color. Drop fresh thyme leaves in.
Make the potatoes. Boil quartered potatoes for 10-15 minutes or until fork tender. Reserve some butter for garnishing. Add the remaining butter, thyme, cream, milk, salt, and pepper. Mash and mix to combine.
Serve. Use a spoon to smooth out the top of the potatoes and then drag little valleys throughout the top. Add the brown butter on top, letting it settle in the valleys. Sprinkle more fresh thyme on top and serve hot.
