Jackfruit is a tropical fruit native to Southeast Asia, South America, and Africa. Jackfruit has a stringy texture + is commonly used as a vegan meat replacement.

Ingredients
Make the filling. Sauté the mirepoix in oil for about 5 minutes. Add potatoes, thyme, flour and then stock. Simmer until potatoes are fork tender. Add peas and oat milk.
Make the biscuits. Combine the wet ingredients, cut in the vegan butter, and then mix in the vegan buttermilk (homemade). Stir into biscuits and add to the top of the pot pie filling.
Bake. Bake the pot pie with biscuits at 350°F (180°C) for about 20 minutes or until the biscuits are done and the filling is bubbly and hot.
