Granola is such a wonderful thing to make at home, for a couple of good reasons.

  1. It’s easy.  Just mix it and bake it.
  2. You can use any flavors you can think of pretty much. (Vanilla, peanut butter, chocolate, cinnamon etc)
  3. It’s easy to make it healthier than store bought versions.  You can use little sweetener, and make that sweetener natural like honey and maple syrup.

The smell of homemade granola as it’s baking is also so nice.  Just watch carefully in the last few minutes so it doesn’t burn.

To make this maple cinnamon granola, just  mix together the dry ingredients and then combine with the melted butter and maple syrup.  Stir and then bake.  Bake for about 30 minutes, stirring once of twice.  I like to bake mine a little bit longer sometimes, just be very careful, like I said, to watch for burning.  Also, use whatever oats you like.  I prefer half large flake oats (in my Oatmeal Raisin Cookies too) because I like their texture.

Healthy granola with maple syrup and cinnamon.

Servings: 6 cups

Ingredients
  • 2 cups large flake oats
  • 2 cups quick oats
  • 1 ½ cup mixed nuts chopped if desired
  • ½ cup unsweetened coconut
  • ¼ cup butter melted
  • ¼ cup maple syrup
  • 2 teaspoon vanilla extract
  • ½ teaspoon maple extract
  • 2 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon sea salt
Instructions
  1. Preheat oven to 350.
  2. Line baking sheet with parchment.
  3. Melt butter and add syrup to it. Mix all other ingredients then add butter and syrup mix and stir to evenly coat.
  4. Spread on baking sheet for 30 minutes or so, stirring halfway. (I bake mine about 40 sometime, I like mine extra crispy)

  5. Store in airtight container.

This week is all about Game Day food.  If you’re not into football or the Superbowl, you could also take these ideas and use them for other parties or get-together.  I love football.  As a Canadian though, I much prefer the NFL to our CFL (but go home team Bombers anyway..) and I’m excited to watch the big game, even though my team is not in it (and hasn’t been for a while… go Bears  …   )

How about you?  Love football? Who’s your team? Don’t love football, but hosting a party anyway? Or are you not a football fan at all? I wasn’t too much of a fan when I was younger; I was more into hockey and baseball (Go Oilers and Jets, and go ‘Jays).

Anyway, I’ll be watching, and I’ll be eating delicious fun food (*mostly* healthy food, because I’ve lost 15 pounds recently and  I’m not about to get side-tracked, especially when I can come up with good options that will likely please everyone in my house).

So to start off the series with one of my healthier options, I’ve got two of my favorite salsas to share with you today – Pico De Gallo and Salsa Verde.  I’ll probably have these with my baked whole wheat tortilla chips, but store-bought is just fine too – do what you like.  (I’ll add in my red salsa recipe at the bottom of the page, from my old blog, it’s really good as well!)

 

Side note – both of these are also awesome on eggs, and the Salsa Verde is crazy good in the slow cooker with chicken if you want to try something like that.

So for the pico de gallo, you’ll just chop everything up.  For the Salsa Verde, I use a blender after everything is out of the oven (don’t worry it still doesn’t take long).  And these are both perfect recipes for making a day ahead! Pico De Gallo - Superbowl Party Ideas

Ingredients
  • 1 small onion, diced
  • 1 tomato, diced
  • 1 clove garlic, microplaned
  • 1 bunch cilantro (1/4 cup or so), roughly chopped
  • Juice of one lime
  • Salt and pepper, to taste
  • Optional: a diced jalapeno for a bit of spice (seeded or not, your choice)
Instructions
  1. Dice onion and then soak in cold water for 5 minutes.
  2. Dice tomato.
  3. Roughly chop cilantro.
  4. Use microplane to grate garlic, or a knife to chop and then mash.
  5. Mix together tomato, onion, cilantro and garlic. Squeeze over lime and season with salt and pepper. Serve immediately or refrigerate and serve within a day or two.

 
Salsa Verde - Superbowl Party Ideas

  • 6 or 7 Tomatillos
  • 1 Jalapeno
  • 2 cloves garlic
  • ½ small onion
  • ¼ cup cilantro
  • juice of 1 lime
Instructions
  1. Preheat broiler. Peel your tomatillos if needed. Wash off sticky residue. Broil tomatillos and jalapeno until soft and covered with black spots, about 5 minutes.
  2. Add everything to a blender jar and blend carefully (it'll be very hot).

 

Red Salsa

Yield:4 ½ cups

Ingredients:

  • 28 oz can whole tomatoes
  • 10 oz can tomatoes with green chilies
  • 1/2 small onion, roughly chopped
  • 2 cloves garlic, roughly chopped
  • 1 jalapeno, roughly chopped (optional)
  • 1/4 cup roughly chopped cilantro
  • 1 teaspoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon organic coconut palm sugar
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon chipotle chili powder

Instructions:

  1. Prep your vegetables. (Don’t worry too much about the chopping – everything is going into the food processor anyway.)
  2. Add all ingredients to food processor and pulse until combined.
  3. Taste and adjust seasoning to your liking (taste with chip you’ll serve it with!)
  4. Refrigerate until needed

Homemade Baked Tortilla Chips PiperCooksHomemade baked tortilla chips are such a quick and easy appetizer or snack, and a great accompaniment to my Quinoa Ground Turkey Skillet.  I also love them with my Turkey Chili,Tomato Salsa and Salsa Verde Recipes too.  I’ll add the missing recipes here soon. I love quick and easy recipes for nights when I’m tired, or just am not to into cooking something up (not too often, but it does happen. I usually live all day in the kitchen, but sometimes I just need a break).

These only take a few minutes to prep and then less than 15 minutes in the oven.  (Flipping once)  These would probably be great as nachos too!  Use an wheat tortillas you like, I’ve used whole wheat here, but I’m sure they’d all work the same.  I sometimes like these with a bit of fajita spice mix on them too. What spices would you use?

  • Flour tortillas
  • 1 tablespoon oil
  • salt and pepper, to taste
Instructions
  1. Preheat oven to 350
  2. Lay tortillas on a lined baking sheet.
  3. Brush each side with oil then sprinkled each side with salt and pepper.
  4. Stack and cut into 6 or 8 wedges.
  5. Bake about 12-14 minutes, until crispy, flipping halfway.
  6. Chips will crisp up a bit more as they cool.
