Happy Canada Day & Happy 4th of July Recipe Round Up

Hey everyone, and welcome to my Happy Canada Day & Happy 4th of July Recipe Round Up.

I’m checking in after some time away here. It’s been a bit of a crazy time lately.  But  think I can finally get back to this.

Today I’m going to highlight some of my favorite summer party recipes.  We may have just celebrated Canada Day in my country, and July 4th is tomorrow, but we still have a whole summer of fun party food 🙂

 


 

If you’re lighting up the grill, you can’t go wrong with these Turkey Burgers (just grease up the grates a bit, or they can stick). They’re also excellent cooked in a frying pan.

Hi, it’s been a while, I hope you’re having a good week and ready for the weekend.  We finally have a bit warmer temperatures here for a couple days, so I’m totally ready for the weekend.

And next week is already Valentine’s Day.  Do you usually do anything? We don’t do much, but I will be making my special dark chocolate, healthy-ish brownies.  These are chocolaty and kind of fudgy after they are refrigerated for a few hours.  I’ve had one warm from the oven too, with the peanut butter mix in, and oh it was so good.Dark Chocolate Brownies - PiperCooks

There’s an avocado in these brownies, but no one ever knows.  With the coconut oil also, we’ve got some healthy fats in there. I like to use coconut sugar in this recipe (it has a lower glycemic index than white refined sugar – about 35 and 60 respectively) but white sugar works also and I do use that too sometimes.  I also developed this recipe with almond meal (when I was eating gluten free) and have since started to use all purpose flour, so if you’re gluten free (or grain free), just use almond meal and you’ll totally love this recipe.  I also bet a gluten free flour mix would work, but I haven’t tested so let me know if you do.

Anyway, either way you make it, these Dark Chocolate Brownies are amazing.  (Try it with a peanut butter swirl!)

Ingredients
  • 100 grams dark chocolate chips (or a large chocolate bar like Lindt’s 85% dark, not sponsored, it’s just what I use)
  • ½ cup coconut oil
  • 1 avocado
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup coconut sugar (or white sugar)
  • ¾ cup all-purpose flour (or 1 cup almond meal for gluten freel)
  • ¼ cup dark cocoa powder, (I like Hershey’s Special Dark)
  • Pinch of salt
  • Optional: ½ cup peanut butter, melted in microwave
Instructions
  1. Preheat oven to 350 F. Line a 9 x 9 pan with parchment paper.
  2. In a glass bowl in the microwave, melt together the coconut oil and chocolate chips or broken up chocolate bar), until liquid, 30 seconds first and then 15 seconds at a time and stirring in between.
  3. In a large bowl, mash the avocado. Add the eggs, vanilla, pinch of salt and the sugar.
  4. Add the flour and sift in the dark cocoa powder. Whisk.
  5. Drizzle in the melted and cooled coconut oil and chocolate, whisking.
  6. Pour into lined 9 x 9 pan.
  7. Optional: If you are using the melted peanut butter, drizzle it on top of the batter now, in a continuous line and then use a pointed knife or toothpick to swirl through it, making a nice design.
  8. Bake for 25 - 30 minutes or until done (toothpick comes out with minimal moist crumb, but not wet batter).
  9. Let cool completely, then refrigerate until serving. I cut into 16 squares.

Buffalo Turkey Meatballs – Superbowl Party Snack Recipes

Hi guys, here’s another super easy and pretty healthy dish for your Sunday Superbowl party.  Or even next Monday’s dinner. These Buffalo Turkey Meatballs come together so quick and easy, especially if you keep bread crumbs in your freezer.  I usually buy or make an extra loaf of bread just to dry out and process into bread crumbs.  Then I pack them in a large freezer bag and freeze them until i need them.  They take no time at all to defrost.  I just let them sit in the bowl for a few extra minutes before continuing with my recipe.Buffalo Turkey Meatballs | PiperCooks.com

I use ground turkey for this recipe but you could use ground chicken or ground beef if you prefer.  I just really like ground turkey.  If you do too, you should try my Quinoa Ground Turkey Skillet, or my Turkey Burgers.  Prep time for this recipe is probably 5-10 minutes, and baking time is about 20 minutes.

Ingredients
  • 1 lb. ground turkey
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 large egg
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ⅓ cup + 2 teaspoons Louisiana hot sauce
Instructions
  1. Preheat oven to 400 F
  2. In a large bowl, mix together bread crumbs and spices. Add the milk and egg, and let bread crumbs absorb the moisture for 5 minutes or so. Add turkey and mix well.
  3. Scoop 1 ½ tablespoon-sized meatballs with a cookie scoop, and place on a lined baking sheet. (You'll get about 26)
  4. Bake for about 20 minutes, or until cooked through.
  5. Add ⅓ cup hot sauce to a medium bowl, add hot meatballs and mix together. Serve immediately with a bit of parsley for garnish, if desired.
