What type of cook are you? I’m the type of person in the kitchen, who always wants to make it myself.  Whether it’s dip, bread, salad dressing, cookies, condiments or spice mixes.  I just love being in the kitchen.  Plus, I don’t like to buy packaged foods, with a bunch of extra additives and preservatives.  I just feel better when I eat cleaner.  And take a break from cake.  Luckily I’m not that into sweets so that’s not too hard to manage that most of the time.

And I totally get people who don’t like to, or don’t want to take the time to make everything little thing from scratch.  I don’t think everyone HAS to just because I do.  I’m still going to. And I’m still going to encourage you to do what YOU want to do.

But… If you want to ditch a store bought item, a spice mix is a good one to ditch.  Or if you just want a great spice mix to add to your dinner rotation for grilling season, my Southwest Seasoning Spice Mix is it.  A homemade, do it yourself spice mix won’t have additives and preservatives which is nice.  It can also be salt free. I don’t usually add salt to my mixes. I season as I go when I cook.

This is a quick and easy pantry staple recipe for you and it’s perfect on grilled vegetables (I used a grill pan for this last week), grilled chicken, roasted and cubed sweet potatoes, and my Slowcooker Salsa Chicken recipe coming up this week.

This is just a great seasoning to have on hand all the time.

Southwest style seasoning/spice mix.

Course: Spice Mix
Servings: 5 tbsp
Ingredients
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne

Hi, it’s been a while, I hope you’re having a good week and ready for the weekend.  We finally have a bit warmer temperatures here for a couple days, so I’m totally ready for the weekend.

And next week is already Valentine’s Day.  Do you usually do anything? We don’t do much, but I will be making my special dark chocolate, healthy-ish brownies.  These are chocolaty and kind of fudgy after they are refrigerated for a few hours.  I’ve had one warm from the oven too, with the peanut butter mix in, and oh it was so good.Dark Chocolate Brownies - PiperCooks

There’s an avocado in these brownies, but no one ever knows.  With the coconut oil also, we’ve got some healthy fats in there. I like to use coconut sugar in this recipe (it has a lower glycemic index than white refined sugar – about 35 and 60 respectively) but white sugar works also and I do use that too sometimes.  I also developed this recipe with almond meal (when I was eating gluten free) and have since started to use all purpose flour, so if you’re gluten free (or grain free), just use almond meal and you’ll totally love this recipe.  I also bet a gluten free flour mix would work, but I haven’t tested so let me know if you do.

Anyway, either way you make it, these Dark Chocolate Brownies are amazing.  (Try it with a peanut butter swirl!)

Ingredients
  • 100 grams dark chocolate chips (or a large chocolate bar like Lindt’s 85% dark, not sponsored, it’s just what I use)
  • ½ cup coconut oil
  • 1 avocado
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup coconut sugar (or white sugar)
  • ¾ cup all-purpose flour (or 1 cup almond meal for gluten freel)
  • ¼ cup dark cocoa powder, (I like Hershey’s Special Dark)
  • Pinch of salt
  • Optional: ½ cup peanut butter, melted in microwave
Instructions
  1. Preheat oven to 350 F. Line a 9 x 9 pan with parchment paper.
  2. In a glass bowl in the microwave, melt together the coconut oil and chocolate chips or broken up chocolate bar), until liquid, 30 seconds first and then 15 seconds at a time and stirring in between.
  3. In a large bowl, mash the avocado. Add the eggs, vanilla, pinch of salt and the sugar.
  4. Add the flour and sift in the dark cocoa powder. Whisk.
  5. Drizzle in the melted and cooled coconut oil and chocolate, whisking.
  6. Pour into lined 9 x 9 pan.
  7. Optional: If you are using the melted peanut butter, drizzle it on top of the batter now, in a continuous line and then use a pointed knife or toothpick to swirl through it, making a nice design.
  8. Bake for 25 - 30 minutes or until done (toothpick comes out with minimal moist crumb, but not wet batter).
  9. Let cool completely, then refrigerate until serving. I cut into 16 squares.
