Slow Cooker Salsa Chicken

Slow Cooker Salsa Chicken

Slow Cooker Salsa Chicken – Easy, quick, Healthy weeknight meal. Just add southwest seasoning mix, salsa and chicken to your slow cooker, on high for 3 hours.

I’m excited to share this quick and easy recipe with you today!

If you made my Southwest Seasoning Spice Mix from my last post, then you’re already a step ahead on this recipe.   If you make my red salsa recipe or have pretty much any red salsa in your fridge, and a couple chicken breasts, then you’re ready to go.

Honestly that’s it for ingredients.  How easy? The result is a flavorful, hands-off, healthy dinner recipe.  Just place the chicken breasts on the bottom of your slow cooker.  Sprinkle over the southwest spice mix.  Add the salsa.  Season with salt and pepper.  Cook on high for about 3 hours.  On low, I’m guessing it would probably be about 7 hours, but I’ve only ever cooked it on high.

Once the chicken is done, serve it however you want.  I usually serve it in a wrap topped with vegetables. For these photos I added some cucumber, red onion and cilantro.  It would be great with some refried beans spread on the wrap and some corn and diced tomato.  You could also add it to a bed of rice with some vegetables.   Enjoy! Let me know how you serve it up. Tag me @checkforpulse on Instagram.

Southwest Seasoning Mix – Easy homemade pantry staple, this spice mix is great on grilled vegetables, grilled chicken, roasted sweet potatoes, my slowcooker salsa chicken. PiperCooks Pin For Later!

Potato Pancake with mozzarella and onions. Perfect weeknight meal, topped with a fried egg and my Spicy Greek Yogurt Dip. Get the recipe on PiperCooks.com

Happy Friday everyone, how was your week?

Mine was a little bit busier. With the temperatures finally decent here, we’ve been able to get out and do more things, which has meant some quicker dinners on some days.  One of my favorite quick dinners to prepare is a savory breakfast (if it’s your favorite too, then you should also try my sweet potato skillet!).

This is a pretty quick recipe to put together.  Just shred some potato and cheese, add the flour egg and parsley, chop a bit of onion and you’re ready to cook.  Add an egg or two for some protein and you’ve got a filling meal.  I like to spend time in the kitchen preparing dinner, but on those busy days, this recipe is just perfect.  I hope you like it too. I like to make a spicy yogurt to go with it, but I love spicy food.  You could switch that out for some sour cream if you prefer.  Or salsa!

Have a great weekend.

Buffalo Turkey Meatballs – Superbowl Party Snack Recipes

Buffalo Turkey MeatballsBuffalo Turkey Meatballs | PiperCooks.com

Hi guys, here’s another super easy and pretty healthy dish for your Sunday Superbowl party.  Or even next Monday’s dinner. These Buffalo Turkey Meatballs come together so quick and easy, especially if you keep bread crumbs in your freezer.  I usually buy or make an extra loaf of bread just to dry out and process into bread crumbs.  Then I pack them in a large freezer bag and freeze them until i need them.  They take no time at all to defrost.  I just let them sit in the bowl for a few extra minutes before continuing with my recipe.Buffalo Turkey Meatballs | PiperCooks.com

I use ground turkey for this recipe but you could use ground chicken or ground beef if you prefer.  I just really like ground turkey.  If you do too, you should try my Quinoa Ground Turkey Skillet, or my Turkey Burgers.  Prep time for this recipe is probably 5-10 minutes, and baking time is about 20 minutes.

I hope you try these out, let me know if you do.  Have a great day!
