What type of cook are you? I’m the type of person in the kitchen, who always wants to make it myself.  Whether it’s dip, bread, salad dressing, cookies, condiments or spice mixes.  I just love being in the kitchen.  Plus, I don’t like to buy packaged foods, with a bunch of extra additives and preservatives.  I just feel better when I eat cleaner.  And take a break from cake.  Luckily I’m not that into sweets so that’s not too hard to manage that most of the time.

And I totally get people who don’t like to, or don’t want to take the time to make everything little thing from scratch.  I don’t think everyone HAS to just because I do.  I’m still going to. And I’m still going to encourage you to do what YOU want to do.

But… If you want to ditch a store bought item, a spice mix is a good one to ditch.  Or if you just want a great spice mix to add to your dinner rotation for grilling season, my Southwest Seasoning Spice Mix is it.  A homemade, do it yourself spice mix won’t have additives and preservatives which is nice.  It can also be salt free. I don’t usually add salt to my mixes. I season as I go when I cook.

This is a quick and easy pantry staple recipe for you and it’s perfect on grilled vegetables (I used a grill pan for this last week), grilled chicken, roasted and cubed sweet potatoes, and my Slowcooker Salsa Chicken recipe coming up this week.

Southwest style seasoning/spice mix.

Servings: 5 tbsp
Ingredients
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne

Sweet Potato Breakfast Skillet

If you’re #teamsavory, and possibly on a mission to be a healthier new you this year, (even if you’re not, it’s still delicious) then try out this recipe.  If you cut the potatoes pretty small, they hardly take any time at all to cook.  This breakfast takes probably about 20 minutes or so.  First I fry the potatoes with the onions and some spices, then add in whatever else I feel like that day.  Usually some bell pepper, mushrooms, a bit of protein, and then top it with a fried egg. Perfection.

Also good with some avocado, sour cream or cheese on top.

 

To make it 21 Day Fix compatible, measure your ingredients before-hand in the proper containers, then follow the cooking directions.

Sweet potato breakfast skillet with spices and fried egg.

Ingredients
  • 1 small sweet potato, chopped small
  • 1 small onion, chopped
  • 1-2 tablespoons coconut oil
  • Other vegetable of your choice (spinach, mushroom, bell pepper, etc.)
  • ½ teaspoon chilli powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ⅛ teaspoon cayenne pepper
  • Salt and pepper, to taste
  • 1 large egg
  • Cooked meat, if desired
  • Sriracha sauce, for garnish, optional
  • Lime juice, for serving, optional
Instructions
  1. Heat a non-stick pan over medium high. Melt the coconut oil then fry the potato and onion, stirring for about 10-12 minutes, or until potato starts to soften.
  2. Add your other vegetables, any cooked meat you need to warm up, and the spices. Cook for a few more minutes to warm everything through.
  3. Plate the potato mix, then heat more oil in the frying pan. Fry your egg how you like it. Set on top of the potatoes.
  4. Garnish with lime juice and sriracha, if desired. (Also good with avocado, sour cream, or cheese)

Hello everyone.  The recipe I’m sharing today is one of my most used.  Every time I go to Costco, I buy the bulk pack of ground turkey.  We don’t eat very much red meat anymore, so I’ve created my own ground chicken and ground turkey burgers, chili, meatloaf and meatball recipes. This recipe for Turkeys Burgers makes a really great tasting burger, with simple ingredients, and it comes together so easily.  It’s perfect for a quick weeknight dinner, and for making in bulk and freezing.

For simple burgers, I just mix the bread crumbs with salt and pepper and whatever spices I’m using (usually a Cajun mix, sometimes Italian) in a bowl with the milk.  I let that sit a few minutes, until the milk soak into the crumbs and they soften a bit.

Then add the turkey and mix together.  Then I use a wet spatula to divide the mixture into four.  I always have a small bowl of water nearby also, because I generously wet my hands before forming the burgers.   I find ground turkey and ground chicken always stick to my hands.  They seem a bit softer and with more moisture than ground beef.  Water on my hands does the trick though.

Then I fry them in either a non-stick pan or my cast iron pan for about 5 to 7 minutes on each side.  (Make sure they are fully cooked!) You can use a meat thermometer here if you want to.

I like this with some spinach on it and mayo and sriracha.  Cheese and mustard are good too!  Add a side salad and some sweet potato fries and you’ll have a really delicious and pretty healthy dinner!

Extra note: These burgers are 21 Day Fix compatible!  I like to follow this plan every once in a while, I really enjoy it, but I like to be able to cook EVERYTHING. So then I quit.  Then I start again… haha.  Anyway, if you follow that plan, this counts as a red and a yellow if you have one patty on one bun (low calorie).  You could probably save a yellow and use a lettuce wrap if you wanted! Just sharing, in case someone is interested.

 

Another extra note: My computer is still wonky and I’ve had the flu, that’s why the lack of posts. 🙂

  • 1 lb ground turkey
  • ¼ cup bread crumbs
  • 2-3 tablespoons milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Cajun seasoning (optional) or your favorite spices
Instructions
  1. Mix all but the turkey together in a bowl. Let sit 5 minutes while bread absorbs milk.
  2. Divide into 4 sections.
  3. With wet hands, shape into 4 patties.
  4. Fry in non-stick pan over medium-high for 5-7 mins per side, or until fully cooked through.
