I love spicy food.  Combine that with cheese and I’m all in.   That makes my Cheesy Chive & Cayenne Scones a perfect option for breakfast, snack, lunch or with dinner.  These scones are great with just butter, and were wonderful with my chicken tortellini soup.

Scones are really pretty easy to make too.  Just don’t over mix them and make sure that your butter is cold.  I start by combining the flour with the salt, pepper, baking powder, sugar and cayenne pepper.  Then I use a box grater to grate over the cold butter.  Then mix together gently to cover the butter with the flour.  After that’s done, mix in the cheese and chives.

Then stir in the milk and combine until just holding together.  I have used cashew or almond milk combined with vinegar here when I’m out of cow’s milk (we just don’t use cow’s milk that much in my house) and it works well.

Finally, just turn the dough out onto a lightly floured counter and press into an circle about eight inches wide.  Cut into six wedges and place on a baking sheet lined with a silicone mat.  Brush with some buttermilk and bake for about twenty to twenty-five minutes or until done.  Enjoy!

Fluffy, cheesy biscuits with chives and a hint of heat from cayenne pepper.

Ingredients
  • 210 grams all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon sugar
  • ¾ teaspoons sea salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground cayenne
  • 57 grams (4 tablespoons) butter, cold
  • 2/3 cup buttermilk, (cashew or almond milk plus vinegar is fine), plus about a tablespoon to brush on top
  • 1 tablespoon dried chives
  • ¾ cups grated cheddar cheese
Instructions
  1. Preheat oven to 400 F (200 C). (I also line my baking sheet with a silicone liner)
  2. Mix together the flour, baking powder, sugar, salt, pepper and cayenne.
  3. Grate in the cold butter and mix so it’s all covered in flour. Add the cheese and chives.
  4. Add milk, starting with half of the amount and mix together with a fork or your hands until it comes together in a ball. It shouldn’t be sticky, should just come together. Don’t over mix. Add more flour, a little at a time if you need to.
  5. Place ball on floured counter, flatten into about an 8-inch round.
  6. Cut like a pizza or pie, into 6 wedges.
  7. Place on baking sheet, brush with a bit of milk and bake for 20-25 minutes, or until done.
Recipe Notes
  • I used half spelt flour and half all-purpose flour for the scones in the photos.

Slow Cooker Salsa Chicken – Easy, quick, Healthy weeknight meal. Just add southwest seasoning mix, salsa and chicken to your slow cooker, on high for 3 hours.


 

I’m excited to share this quick and easy recipe with you today!

If you made my Southwest Seasoning Spice Mix from my last post, then you’re already a step ahead on this recipe.   If you make my red salsa recipe or have pretty much any red salsa in your fridge, and a couple chicken breasts, then you’re ready to go.
Slow Cooker Salsa Chicken – Easy, quick, Healthy weeknight meal. Just add southwest seasoning mix, salsa and chicken to your slow cooker, on high for 3 hours.

 

Honestly that’s it for ingredients.  How easy? The result is a flavorful, hands-off, healthy dinner recipe.  Just place the chicken breasts on the bottom of your slow cooker.  Sprinkle over the southwest spice mix.  Add the salsa.  Season with salt and pepper.  Cook on high for about 3 hours.  On low, I’m guessing it would probably be about 7 hours, but I’ve only ever cooked it on high.

Once the chicken is done, serve it however you want.  I usually serve it in a wrap topped with vegetables. For these photos I added some cucumber, red onion and cilantro.  It would be great with some refried beans spread on the wrap and some corn and diced tomato.  You could also add it to a bed of rice with some vegetables.   Enjoy! Slow cooked chicken breast with southwest seasoning and red salsa.

Ingredients
  • 4 chicken breasts
  • 1 16 oz jar salsa
  • 1 tbsp southwest seasoning mix
Instructions
  1. Lay Chicken breasts on the bottom of the slow cooker. Sprinkle with fajita mix. Top with salsa. Cook on high for 3 hrs, or until chicken is cooked through.

    Remove chicken with tongs, to a cutting board. Pull apart with 2 forks, then add back to salsa mix in the crockpot. Serve as you like.

What type of cook are you? I’m the type of person in the kitchen, who always wants to make it myself.  Whether it’s dip, bread, salad dressing, cookies, condiments or spice mixes.  I just love being in the kitchen.  Plus, I don’t like to buy packaged foods, with a bunch of extra additives and preservatives.  I just feel better when I eat cleaner.  And take a break from cake.  Luckily I’m not that into sweets so that’s not too hard to manage that most of the time.

And I totally get people who don’t like to, or don’t want to take the time to make everything little thing from scratch.  I don’t think everyone HAS to just because I do.  I’m still going to. And I’m still going to encourage you to do what YOU want to do.

But… If you want to ditch a store bought item, a spice mix is a good one to ditch.  Or if you just want a great spice mix to add to your dinner rotation for grilling season, my Southwest Seasoning Spice Mix is it.  A homemade, do it yourself spice mix won’t have additives and preservatives which is nice.  It can also be salt free. I don’t usually add salt to my mixes. I season as I go when I cook.
