Happy First Day of Spring!  I think we should all celebrate by making this Cara Cara Orange Cake with some Orange Cream Cheese Icing.  I mean, it’s FINALLY spring.  I need some major citrus.  And a pretty cake never hurts.

In the photos, you’ll see one 8-inch round layer.  That’s because I used the other half of the batter in my Ikea Horse Cake tin.  Big mistake.  I mean, it was a cute cake. It tasted just as good, but it’s REALLY hard to photograph a horse cake.  Anyway, you can make yours however you like.  But a two layer 8-inch round one would be perfect.

My icing recipe makes more than this needs also, but I just spread some on a chocolate banana sheet cake to use up the rest. I guess I’m on a cake kick.  Sometimes it’s kale and cauliflower, sometimes it’s cake.

I hope you love this cake.  It uses sweet Cara Cara oranges, which we LOVE and we always pick up a bag when Costco has them. Also worth noting, I’ve only put 2 cups or so of powdered sugar in the icing recipe.  Most recipes usually have a lot more powdered sugar than that.  I’m not big into sweets (surprising, with all the cake I’ve been making), and I really like that this icing is kind of sweet, but really tastes like cream cheese and orange.  Anyway, while you’re making yours, go ahead and taste it after 2 cups of icing sugar is added, and then decide if you want more.

Orange layer cake with Cara Cara orange juice and zest. With Orange Cream Cheese Icing.

Course: Dessert
Servings: 2 8-inch layers
Ingredients
Cake:
  • 250 grams (about 2 cups) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup plain yogurt
  • 1/2 cup orange juice (from about 2 oranges)
  • 1 teaspoon orange zest (from about 1 orange)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sugar
Frosting:
  • 8 oz (one package) cream cheese, room temperature
  • 1/2 cup (one stick) butter, room temperature)
  • 250 grams (about 2 cups) powdered sugar
  • 1/2 teaspoon orange zest
  • 1 tablespoon fresh orange juice
  • 1 pinch salt
Instructions
  1. Preheat oven to 350 F
  2. Grease 2 cake pans (I used one 8-inch round cake pan and 1 horse shaped pan, but you can use 2 8-inch round cake pans)
  3. In a small bowl, mix together the flour, baking powder and salt. Set aside.
  4. In a large bowl, mix together the milk, orange juice, orange zest, yogurt, vanilla, eggs and sugar. Sift in the dry mixture and whisk together just until combined.
  5. Pour into pans and bake for 20-25 minutes, or until done.
  6. Let cool completely.
  7. To make the frosting, whip up the cream cheese with the butter until light and airy.
  8. Add powdered sugar, a pinch of salt, orange zest and juice and whip until smooth. Ice cooled cakes.

Hi guys. Let’s talk breakfast! What’s your favorite? Pancakes? Toast? Eggs? Cereal? Yogurt and Granola? Leftover pizza? And do you eat something different every day? Or can you get into obsessive territory like me? I’ve been eating this avocado toast for months. Before that, it was peanut butter toast with fried eggs & sriracha on top, and before that my Sweet Potato Skillet.

This Avocado Toast is so good.  It’s a bit spicy (you can dial it down or leave it out if you like), a bit sweet and a bit salty. I love it. It’s also full of healthy fats and keeps me full for a couple of hours, which is especially good on tougher workout days, because I can get by with just a protein smoothie after exercising and feel great until dinner.

I load my avocado toast up. There are 10 ingredients here (including salt and pepper). But, you don’t have to use them all if you don’t want to. If you don’t like feta, skip it. Don’t have both seeds? Use whatever one you like. But this way is my favorite.

I toast my bread until it’s really crunchy. In a bowl I mix a good squeeze of lime juice and a teaspoon or two of chili paste (Sambal Oelek – I use this one by Huy Fong) in with my mashed avocado. Then I spread that on the toast and crack fresh salt and pepper over.  Next, I sprinkle on the pumpkin seeds and sunflower seeds. Finally, I crumble on some feta cheese and drizzle the whole thing with balsamic glaze. Perfection.  Try it out if you’re an avocado lover!  Pin it for later!

Ingredients
  • 2 slices bread
  • 1 avocado
  • squeeze lime juice
  • 1-2 tsp chili paste (Sambal Oelek)
  • salt and pepper, to taste
  • 1 tbsp pumpkin seeds
  • 1-2 tsp sunflower seeds
  • 1-2 tbsp feta cheese, crumbled
  • drizzle balsamic glaze
Instructions
  1. Toast your bread.

  2. Scoop avocado flesh into a bowl and mash. Add lime juice and chili paste. Mix.  Spread onto the toast.

  3. Crack fresh salt and pepper onto toast.  Add both seeds.  Crumble feta on top. Drizzle with balsamic glaze. Serve.

Granola is such a wonderful thing to make at home, for a couple of good reasons.

  1. It’s easy.  Just mix it and bake it.
  2. You can use any flavors you can think of pretty much. (Vanilla, peanut butter, chocolate, cinnamon etc)
  3. It’s easy to make it healthier than store bought versions.  You can use little sweetener, and make that sweetener natural like honey and maple syrup.

The smell of homemade granola as it’s baking is also so nice.  Just watch carefully in the last few minutes so it doesn’t burn.

To make this maple cinnamon granola, just  mix together the dry ingredients and then combine with the melted butter and maple syrup.  Stir and then bake.  Bake for about 30 minutes, stirring once of twice.  I like to bake mine a little bit longer sometimes, just be very careful, like I said, to watch for burning.  Also, use whatever oats you like.  I prefer half large flake oats (in my Oatmeal Raisin Cookies too) because I like their texture.

Healthy granola with maple syrup and cinnamon.

Servings: 6 cups

Ingredients
  • 2 cups large flake oats
  • 2 cups quick oats
  • 1 ½ cup mixed nuts chopped if desired
  • ½ cup unsweetened coconut
  • ¼ cup butter melted
  • ¼ cup maple syrup
  • 2 teaspoon vanilla extract
  • ½ teaspoon maple extract
  • 2 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon sea salt
Instructions
  1. Preheat oven to 350.
  2. Line baking sheet with parchment.
  3. Melt butter and add syrup to it. Mix all other ingredients then add butter and syrup mix and stir to evenly coat.
  4. Spread on baking sheet for 30 minutes or so, stirring halfway. (I bake mine about 40 sometime, I like mine extra crispy)

  5. Store in airtight container.
